Pasta Fagioli Soup with Bacon

An Italian classic that is quick and simple is spaghetti fagioli with bacon. Add grated Romano cheese as a garnish.

Ingredients

  1. 1 (29 ounce) can diced tomatoes
  2. 2 (14.5 ounce) cans chicken broth
  3. 2 (14 ounce) cans Great Northern beans, undrained
  4. 3 cups water
  5. 1 (14 ounce) can chopped spinach, drained
  6. 1 (8 ounce) can tomato sauce
  7. 8 slices crisp cooked bacon, crumbled
  8. 1 tablespoon minced garlic
  9. 1 tablespoon dried parsley
  10. 1 ½ teaspoons salt
  11. 1 teaspoon garlic powder
  12. ½ teaspoon ground black pepper
  13. ½ teaspoon dried basil
  14. ½ pound seashell pasta
  15. 1/2 cup grated Romano cheese, or as needed

Instructions

  1. Combine tomatoes, chicken broth, beans, water, spinach, tomato sauce, crumbled bacon, garlic, parsley, salt, garlic powder, pepper, and basil in a large stockpot. Bring to a boil. Cover, reduce heat, and simmer for 40 minutes.
  2. Add pasta and cook, uncovered, until pasta is tender yet firm to the bite, about 10 minutes. Ladle soup into individual serving bowls. Sprinkle with Romano cheese to serve.

I typed in “bacon” and “beans” in the search and this is one of the soups that came up. I had everything in my pantry, except I used fresh spinach instead of canned. I like how easy this is, no chopping! My 11 year old liked it. Next time I will half the salt and pasta.

I used poblano peppers because that is all I had. I really loved this recipe. I added a tsp of garlic powder and 1 cup of frozen corn. I made the rest as the recipe states. It is very tasty and very easy to make. I will definitely make this many more times. I will never eat stuffed peppers with hamburger again. Love this!

I did not use bacon to make it a meat-free recipe. Also used a different noodle since seashell pasta was not on hand.

Absolutely delish!! I didn’t have plain diced tomato so used the one I had with oregano basil and garlic. That was a good “ mistake” ! Cut down on the added spices. Also next time ( which will probably be next week!!) I will only put in about 6 ounces pasta. The 8 ounces made It a little too thick and less broth. Otherwise many raves over it!!

This is a very good, easy recipe. I omit the bacon and I don’t add the pasta into the soup. I find that adding pasta to soup makes the pasta smushy. I prefer to cook some ditalini pasta on the side and just add to soup when I am serving. But the recipe itself is very tasty and I will make it again!

Ugh. It is such a disappointment when you spend precious time and money on a recipe. Easy? Yes. I will give it that, basically dumping cans into a pot. I think the worst ingredient is the canned spinach. I wish I would’ve known to use fresh. The crispy bacon expands and gets soggy in the watery broth. Just a complete disappointment. Blech.

Love this recipe and so does my husband, parents and landlord. I changed a few things though. Used fresh spinach, Canneli beans, used cut up sausage and fry it instead of bacon and of course added carrots and celery because who has soup without carrots and celery?!

I added additional vegetables such as celery, red onion, mushrooms and zucchini. I used black beans instead of northern beans and fresh spinach leaves instead of canned. I substituted tomato paste for the tomato sauce. It made a very thick hardy meal my family loved!
