Ingredients

  1. 2 cups shredded sharp Cheddar cheese
  2. ¼ cup mayonnaise
  3. ¼ cup butter, softened
  4. 1 (4 ounce) jar chopped pimentos, drained
  5. 1 teaspoon garlic powder, or to taste
  6. ¼ teaspoon salt, or to taste
  7. ¼ teaspoon white sugar
  8. ½ cup chopped pecans

Instructions

  1. Beat the shredded Cheddar cheese, mayonnaise, and softened butter in a mixing bowl with a mixer on low speed until well blended. Add the pimentos, garlic powder, salt, and sugar; mix to combine. Stir in the pecans.
  2. This recipe makes enough cheese spread for about six sandwiches, depending on how much pimento cheese you like on your sandwiches. As an appetizer, it can be served with crackers and celery sticks, or it can be served on toast points or crackers; the yield there is approximately 1 1/2 teaspoons cheese spread per cracker.
  3. This can be served immediately, but for best results, cover mixing bowl (or a smaller bowl, if you desire) with plastic wrap and place in refrigerator to allow flavors to combine, approximately one hour. Cheese spread will harden in the refrigerator; allow to stand at room temperature for about half an hour to reach spreadable consistency.

Everyone loved this dip, I didn’t put the pecans in tho, will be my go to for get togethers

This was very, very easy to make and so tasty. I would suggest to add the garlic powder and salt to taste. I use Dukes Mayo which I love but any recipe I add it to I usually add less salt than called for. The pecans help to fancy it up a bit. I just love it and will make it again next week for a church get-together.
