Parsnip Home Fries

Ingredients

  1. 2 tablespoons olive oil
  2. 2 large parsnips, cut into small dice (about 2 cups diced)
  3. 1 red bell pepper, diced
  4. 1/4 red onion, diced
  5. Kosher salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  2. In a large bowl, toss together the oil, parsnips, bell peppers and onions. Season with salt and pepper. Spread in an even layer on the prepared baking sheet.
  3. Bake until the parsnips are browned and cooked through, about 30 minutes. Serve immediately.

I have been looking for potato substitutes since I am trying to lose weight.  This one is a keeper.  Tried it – loved it.  This is a very good idea- nothing will replace a potato, but this one comes pretty close!
