Ingredients

  1. 1 pound thin green beans (haricots verts)
  2. Extra-virgin olive oil
  3. Kosher salt and freshly ground black pepper
  4. 1 cup grated Parmigiano-Reggiano

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt and pepper, to taste. Great recipe, I make asparagus the same way. It ended up being a bit crunchy. I’d add another 5-7.

Very good I put cherry tomatoes cut in half besides the green beans

I did them on the grill using a grill basket! I added some lemon juice to brighten them up.

Turned out great. Since I had regular green beans I left it in the oven for about 14 mins instead of 10.

LOVE LOVE LOVE! I can never find haricots verts around here, but regular green beans work fine. Just need to cook them longer. I LOVE salt, but be careful not to salt too much because the Parm is salty. My new favorite way to eat green beans! Kids fought over them. WITH the salt and Parm, they’d even be a great football game salty snack…and healthier than other fried snacks.

Oh Wow… we were having Parmesan Mashed Potatoes, with something (can’t remember now and I had just got some green beans from Farmers Market…then I found this recipe. Wow…huge hit! Was surprised how tender they turned in just 10 minutes .Making them again tonight. Might be one of our regulars now.
