Ingredients
- 1 pound thin green beans (haricots verts)
- Extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 1 cup grated Parmigiano-Reggiano
Instructions
- Preheat the oven to 400 degrees F.
- Trim off the tough end of the beans and arrange the beans on a nonstick cookie sheet. Drizzle with olive oil season with salt and pepper, to taste. Sprinkle the cheese evenly over the top and bake until the cheese melts and forms a crisp shell over the beans, about 10 minutes. Let the beans sit a few minutes for the cheese to cool slightly. Lift the beans out onto a platter and serve.

Great recipe, I make asparagus the same way. It ended up being a bit crunchy. I’d add another 5-7.
Very good I put cherry tomatoes cut in half besides the green beans
I did them on the grill using a grill basket! I added some lemon juice to brighten them up.
Turned out great. Since I had regular green beans I left it in the oven for about 14 mins instead of 10.
This was very easy, fast and tasty! Best of all my kids ate it! A family winner for sure!

LOVE LOVE LOVE! I can never find haricots verts around here, but regular green beans work fine. Just need to cook them longer. I LOVE salt, but be careful not to salt too much because the Parm is salty. My new favorite way to eat green beans! Kids fought over them. WITH the salt and Parm, they’d even be a great football game salty snack…and healthier than other fried snacks.
Very good….added fresh squeezed lemon, red pepper flakes and fresh garlic and roasted for 20 minutes. Delightful!!!!!
Oh Wow… we were having Parmesan Mashed Potatoes, with something (can’t remember now and I had just got some green beans from Farmers Market…then I found this recipe. Wow…huge hit! Was surprised how tender they turned in just 10 minutes .Making them again tonight. Might be one of our regulars now.
