Papaya and Feta Salad

Ingredients

  1. 1 large papaya, seeded and diced, about 3 cups
  2. 1/2 cup chopped fresh mint leaves
  3. 3 tablespoons extra-virgin olive oil
  4. 4 tablespoons lime juice (from about 1 lime)
  5. 1 tablespoon honey
  6. Salt
  7. Freshly ground black pepper
  8. 1 cup crumbled feta cheese

Instructions

  1. Place the papaya and mint leaves in a medium bowl. In a separate bowl, whisk together the olive oil, lime juice and honey. Drizzle the dressing over the papaya, season with salt and pepper and toss to coat. Divide the salad among 4 plates, sprinkle with the feta, and serve.

I’m an Italian from Argentina and you have brought all my most favorite flavors to life in this recipe. Who would have thought of the feta and the papaya. Truly a masterpiece. I am sorry that the “latin” cuisine mentioned, which is not an accurate description for anything cooked in latin countries, was mentioned. Someone who does not know how to spell, or cook, seems to feel she knows all about “latin” cookery. Latin, meaning spanish speaking, countries have an enormous diversity of flavors. Latin cooking is not just mexican or caribbean based. There are more countries out there. Ingrid is extremely talented, and makes her show with a flare from Florida. This alone encompasses an awful lot of tastes. Thank you Ingrid.

I was so excited to get this recipie. We go to Mexico where there is always plenty of Papaya. I love it from the fruit vendor but never when I fixed it. I loved the tip she gave. I see so many people rated poor, but I trally believe that they did not get a good Papaya or did not take her tip!!! Great show….love her!

I never liked papaya until Ingrid showed me how to prepare this recipe. I always have this salad on hand in my fridge. If you don’t like papaya, do what Ingred says, put slices in the skin and let it set for a day or two, the fruit becomes delectable.

But Chica when it come’s to your recipes I have not yet have been impress by one. Latin food require certain latin spice in order to be consider latin food. Chica find your spice!

A great combo of flavors: sweet and salty with a tang from the lemon, and the freshness of the mint. Really fabulous, plus easy to throw together. I only made a small batch because of other reviews, but i am going to make a large batch tomorrow night. Looking forward to trying her other recipes, with ingredients like mango and jicama, I never know what to do with these foods, but now I have seen some episodes with some great looking dishes, I will try them all!

I love this recipe. The fresh mint “makes” this salad. This is the first time I have ever had papaya…love it! I add some prosiutto to get some protein…even better.

Papyas are great, but the dressing on it is nasty, along with the feta. The recipe is a disaster. Dose Ingrid actually eat this stuff?
