Panko-Breaded Pork Parmigiana

Ingredients

  1. 4 (5 ounce) boneless, thin cut pork loin chops
  2. salt and freshly ground black pepper to taste
  3. ⅓ cup all-purpose flour
  4. 2 large eggs, beaten
  5. ¼ cup panko bread crumbs
  6. ¼ cup Parmesan cheese
  7. 2 teaspoons Italian seasoning
  8. 2 tablespoons olive oil
  9. 1 cup marinara sauce
  10. 3 ounces shredded mozzarella cheese
  11. 2 tablespoons minced fresh flat leaf parsley

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Pound pork chops with a meat mallet to an even 1/4- to 3/8-inch thickness. Season with salt and pepper on both sides.
  3. Place flour and eggs into 2 separate shallow dishes. Combine panko bread crumbs, Parmesan cheese, and Italian seasoning in a third dish.
  4. Dip each pork chop first into flour, shaking off the excess. Next, dip into egg mixture, letting any excess drip off. Coat chops in crumb mixture and set on a plate.
  5. Heat oil over medium-high heat in a large skillet until hot. Fry chops for 2 minutes, flip, and fry an additional 2 minutes. Remove from heat. Transfer to a baking dish and top each chop with 1/4 cup of sauce, then top with cheese.
  6. Bake in the preheated oven until sauce is warmed through and cheese is melted, 6 to 8 minutes. Top with parsley before serving.
  7. I used Rao’s(R) marinara sauce for this recipe.

I made this. I added extra sauce because we are a sauce eating family. I also used Italian panko crumbs so I didn’t need to add Italian seasoning. My husband seemed to enjoy and he’s not a big “Italian food fan.” I definitely would recommend it

Great recipe! Only thing I did that may have been a bit different was use a Cajun sauce that spiced it up very nicely. I used Fettucine (a nice heartier pasta) and garlic bread as sides.

This was a very easy, delicious dish! The only tweak that I made was to add some chillies to the Panko mixture. We love spicy foods so that made it more delicious

This was a quick, tasty and healthy weeknight dinner. Taste was really good but I used the seasonings in amounts I like. I served it with some whole wheat thin spaghetti and more marinara sauce. Had leftovers for next day. Yum.
