Ingredients
- 1 (12 ounce) panettone
- 1 (8 ounce) container mascarpone cheese
- ⅓ cup orange juice
- ⅓ cup orange marmalade
- 4 eggs
- ¼ teaspoon ground cinnamon
- 1 pinch ground nutmeg
- 3 tablespoons olive oil
Instructions
- Slice panettone into 1 inch slices; cut each slice into 4 wedges. In a small bowl, whisk together the mascarpone, orange preserves, and orange juice. In a separate large bowl, whisk the eggs, cinnamon, and nutmeg.
- Heat the olive oil in a large skillet over medium heat. Dip the panettone into the egg mixture, coating well. Place into the hot oil; fry until golden brown, about 3 minutes per side. Serve with the orange mascarpone sauce.

This is a good base to build on. I subbed the mascarpone cheese with Fage greek yogurt and added powdered sugar, 1/4 c concentrated OJ and some orange rind. My daughter drizzled some agave syrup on hers for added sweetness and it was really good!
