Overnight Mango Chia Pudding

Ingredients

  1. 1 cup almond milk
  2. 5 tablespoons chia seeds
  3. 1 tablespoon maple syrup
  4. ½ teaspoon vanilla extract
  5. 1 pinch ground cinnamon
  6. 1 pinch ground cardamom
  7. 2 small mangoes – peeled, seeded, and diced
  8. 1 tablespoon maple syrup

Instructions

  1. Stir almond milk, chia seeds, maple syrup, vanilla extract, cinnamon, and cardamom together in a bowl with a lid. Refrigerate 8 hours to overnight.
  2. Combine mango and maple syrup in a blender; blend until smooth.
  3. Layer chia pudding and mango puree in 4 dessert bowls or glasses.
  4. Garnish the chia pudding with some granola if you like.
