- 1 sweet onion, cut into wedges
- 2 cloves garlic, sliced
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar, or more to taste
- 1 pinch salt and ground black pepper to taste

- Mix sweet potatoes, onion, and garlic in a bowl. Drizzle olive oil over the mixture and toss to coat; pour into a shallow roasting pan.

Way more tender and tasty than it looks. Super easy and great for several days. Easy prep and I make it in the casserole dish. Less work!
This is a very tasty recipe. I skip the vinegar and make a dipping sauce. Equal parts mayo and sour cream, 2 cloves fresh minced garlic, a little chipotle powder, a dash of cayenne plus salt and pepper to taste. OR you can mix your favourite spices to your liking. YUMMM.

My family really likes this recipe. I have made it several times and even with alterations it is yummy. I do agree with others that it could use a little less oil.Also the balsamic vinegar isn’t necessary but good as well. Tonight I added a golden beet that was in my fridge!

Tasted amazing! I didn’t have sweet onions so I actually added some green onions they didn’t hold up so well in the oven but whatever! I also drizzled with balsamic glaze and sprinkled with fresh Parm! It was delicious.

This is a simple and easy to make side. I made it as written and it came out perfectly. The only change I would make is to use a balsamic reduction instead of balsamic vinegar to finish.

I was using this to create a kale + quinoa salad with a citrus vinaigrette that I got in VA Beach. They just listed, of course, the contents of the salad. So I worked hard to figure out how to recreate it. I may have improved it with these sweet potatoes!!!
