Ingredients

  1. 4 cups chopped peeled sweet potato
  2. 1 sweet onion, cut into wedges
  3. 2 cloves garlic, sliced
  4. 3 tablespoons olive oil
  5. 1 tablespoon balsamic vinegar, or more to taste
  6. 1 pinch salt and ground black pepper to taste

Instructions

  1. Gather all ingredients.

  3. Preheat the oven to 425 degrees F (220 degrees C).
  4. Mix sweet potatoes, onion, and garlic in a bowl. Drizzle olive oil over the mixture and toss to coat; pour into a shallow roasting pan.

  7. Roast sweet potato mixture in the preheated oven, turning frequently, until the vegetables are soft and golden brown, 30 to 35 minutes.

This is a very tasty recipe. I skip the vinegar and make a dipping sauce. Equal parts mayo and sour cream, 2 cloves fresh minced garlic, a little chipotle powder, a dash of cayenne plus salt and pepper to taste. OR you can mix your favourite spices to your liking. YUMMM.

My family really likes this recipe. I have made it several times and even with alterations it is yummy. I do agree with others that it could use a little less oil.Also the balsamic vinegar isn’t necessary but good as well. Tonight I added a golden beet that was in my fridge!
