This is a fantastic, nutritious side dish for the summer. To get the best flavor, only make when grape tomatoes are in season. Excellent on the grill or in the oven.

Ingredients
- 1 pound grape tomatoes, halved
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 5 fresh basil leaves, chopped
- 1 teaspoon chopped fresh thyme
- salt to taste
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Place tomatoes onto a large square of aluminum foil. Drizzle olive oil over tomatoes and top with garlic, basil, thyme, and salt. Wrap the foil around tomato mixture sealing tightly to keep juices inside.
- Bake in the preheated oven until tomatoes are tender, about 30 minutes. Cool slightly.

Okay, but this garlic needs to be cooked longer or at a higher temperature.
My tomatoes were smaller than grape so I did not halve them. Cooked on a covered stainless steel roaster cover at 400 degree oven 30 minutes. This recipe is a keeper. Delicious.
Easy to make. Very tasty. I did roast at 400 degrees for about 30/35 minutes. Making it again for July 4th, 2020 luncheon.
I made as recipe stated but heated to 400 degrees as noted by another reviewer. The fresh minced garlic was still bitter.

This was terrific! So easy and so delicious. Must admit I did add some sliced Kalamata olives and some pine nuts. Tip for halving grape tomatoes. Take 2 plastic tops from supermarket plastic take-outs, put tomatoes on inverted cover, cover with second cover. Run long knife through gap in covers, tomatoes cut in half, no problem.
