Ingredients
- ½ cup butter, cubed
- 2 pounds red potatoes, cut in half
- 1 tablespoon minced onion, or to taste
- 2 tablespoons minced fresh parsley
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Place butter into a large baking dish and set in the oven while preheating.
- Remove the baking dish from the oven. Add potatoes and onion and toss until thoroughly coated with butter; this will give them a nicely browned and slightly crisp coating.
- Bake in the preheated oven until potatoes are tender, about 40 minutes. Remove from the oven and sprinkle with parsley, salt, and pepper. Toss until well coated.
- These potatoes can be cooked in the oven alongside meat, just add more time if cooking at a lower temperature. They can also be made ahead of time and just reheated without losing flavor or texture. They also freeze well.

Reviews
These potatoes were amazing! The warm butter and crisp parsley made it hard to stop eating them. Our parsley was kind of sliding around with the butter, but we loved them and will make them again. Give your grandma our thanks for the recipe!
so simple, yet so delicious
These turned out great! Very easy to make. Turned the broiler on at the end to brown them further.

So simple and delicious!
Made it just like the recipe says and my wife went crazy over it! She said to be sure to save it or print it!
Wonderful the way it is written! Cooked a little longer though.
I didn’t have all the ingredients on hand for this particular recipe, so I improvised by looking at another and used what I had on hand. It still turned out very good and I was pleased with myself. I plan on going to store next time I make these so I can try the recipe as written.
Great Recipe!
Easy, quick, and super good.
I made this and it was delicious. I’ll be making this more often.
add onions
I made this. But I also added whole boneless chicken breasts. Soy sauce and minced garlic with vegetables. Covered with aluminum foil and baked for an hour.
My family begs me to make this every time we have a big dinner together! I do double all the ingredients except of course the potatoes. If you want to make more potatoes then adjust the ingrediants as well. I double the rest of the ingrediants because it gives the potatoes just the right flavoring!
Great potatoes
These have become a regular in my rotation. They are easy and delicious.
This was delicious, my husband gave them a thumbs up! Thanks
Easy to prepare and delicious! The whole family loved them
Wonderful. A no brainer for great side.
Made this twice. Only change was I used dried parsley because I didn’t have fresh. Family loved them!
Made as per recipe except added two more table spoons of butter. Served with steamed lobster tails and broiled shrimp. they were the perfect match.
