Orange-Cranberry Muffins

The muffins tasted and looked exactly like the mouthwatering, tart McDonald’s® orange-cranberry muffins! Much better now that my youngest of my four children helped me put this together.

Ingredients

  1. 1 cup white sugar
  2. 2 large eggs
  3. ⅓ cup vegetable oil
  4. 1 tablespoon vanilla extract
  5. 1 ½ teaspoons baking soda
  6. 1 ½ cups all-purpose flour
  7. ¾ cup fresh cranberries
  8. ½ cup pulp-free orange juice
  9. 1 ½ tablespoons grated orange zest

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line 6 large muffin cups with paper liners.
  2. Beat sugar and eggs together with a fork or electric mixer until blended. Mix in vegetable oil. Stir in vanilla extract and baking soda. Add flour, cranberries, orange juice, and orange zest and mix up nicely.
  3. Spoon batter into the prepared muffin cups, filling each to the top.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

I like to make things as written in a recipe, on the first go. But I didn’t have any oranges for the zest. So I used 1 teaspoon of orange oil. But that being said. I really liked it, I will make it again and added it to my list of cranberry goodies. It is tangy, but I like that much more than overly sweet. Thanks for sharing.
