Orange Coleslaw

My mother is the source of this chipped beef dish. It’s a delicious comfort food that we nickname SOS (Same Ole Stuff). It tastes fantastic with a cool beer and is simple to make.

Ingredients

  1. ½ medium head cabbage, thinly sliced
  2. 10 ounces purple daikon radishes, halved and sliced
  3. 4 ounces queso blanco, crumbled
  4. ⅓ cup chopped peanuts
  5. 2 oranges, peeled and diced
  6. 4 tablespoons diced shallot
  7. 1 lime, juiced
  8. 2 tablespoons extra-virgin olive oil, or to taste
  9. salt and ground black pepper to taste

Instructions

  1. Combine cabbage, radishes, queso blanco, peanuts, oranges, and shallot in a bowl. Drizzle with lime juice and olive oil. Add salt and pepper. Toss to combine.
  2. You can use watermelon radishes or common radishes instead of purple daikon.
  3. You can use any crumbly cheese you want.
