One Pan Cheesy Chicken and Vegetables

Ingredients

  1. 1 tablespoon olive oil
  2. 1 pound skinless, boneless chicken thighs, cut into strips
  3. 1 medium onion, finely diced
  4. 2 medium carrots, peeled and diced
  5. 2 stalks celery, diced
  6. 1 (5.6 ounce) package Knorr® Rice Sides™ – Chicken
  7. 2 cups water
  8. 1 ½ teaspoons dried basil
  9. ¾ cup shredded Cheddar cheese

Instructions

  1. Heat oil over medium-high heat in a non-stick skillet. Add chicken; cook and stir until cooked through (no longer pink in the center). Transfer chicken to a bowl.
  2. Stir diced onion, carrot, and celery into the pan; cook, stirring occasionally until vegetables start to soften, about 5 minutes. Season with salt and pepper. Stir in water and Knorr® Rice Sides™ – Chicken flavor. Bring to a simmer over high heat; reduce to medium-low; cover and simmer 7 minutes.
  3. Stir in cooked chicken, basil, and shredded Cheddar cheese.

It is quick and easy and very tasty. I didn’t have the rice side kicks so I just made regular rice and added in onion soup mix instead.

Sadly without flavor. Chose it because it was simple, but “simple” would’ve been a compliment for the taste. 🙁
