Ingredients
- 2 large russet potatoes (about 1 1/2 pounds)
- 2 tablespoons olive oil
- 8 medium garlic cloves, smashed
- 2 teaspoons kosher salt
Instructions
- Heat oven to 475 degrees F and arrange rack in top.
- Peel potatoes and cut lengthwise into 1/2-inch-wide planks. Cut planks lengthwise into 1/2-inch-wide strips then cut strips in half crosswise. Cover potatoes in hot tap water and let soak for 10 minutes before proceeding.
- Meanwhile, combine oil and garlic in a small saucepan and bring to a simmer over medium-low heat. As soon as the mixture is aromatic and the garlic makes a sizzling noise, remove it from the heat and set aside to cool.
- When potatoes are done soaking, drain, and thoroughly pat dry with paper towels. Place potatoes on a baking sheet, drizzle with garlic oil, sprinkle with 1 teaspoon of the salt, and turn to coat well. Spread fries out evenly across baking sheet and roast until fries are just beginning to color, about 25 minutes. Using a spatula, scrape sheet to turn fries and continue to roast until crisp on outside, potatoes give way when pierced with a knife, and are golden brown, about 15 minutes more.
- Remove fries from oven, season with remaining 1 teaspoon of salt, and serve immediately.

I love oven fries. They are better than fried to me. I strongly suggest you DO NOT rinse the potatoes after you cut them into fries. They don’t turn out as well. No doubt. ALSO I cook them at 425 to 430 degress. 475 is too hot. I do like the fresh garlic idea. One last thing. You don’t have to cook the garlic before putting it on the fries. The garlic will cook in the oven. 🙂
Watch the oven time. Mine were overcooked and a bit difficult to eat. Next time I will reduce the cooking time. These are wonderful, just watch the cooking time.
Easy and garlic tasting!
These fries were really good. However, they were not very garlicky. At least not as much as I like them. Eight cloves seems like a lot but the flavor doesn’t really come out that strong. I will probably coat them in garlic paste as well as chopped cloves next time I make them.
These fries were very easy to make. They were very similar to oven fries I normally make though. I had hoped to be able to taste some garlic flavoring but was not even able to tell that I had used 8 cloves. I was definetily able to smell the garlic when I infused the oil but couldn’t taste it when the fries were done. I do enjoy Aida and her show.

Been making these for years. sometimes I sprinkle on garlic/onion powder. Sometimes seasoned salt or salt free seasoning. They’re always good and never any leftovers.
My fries did not come out like the ones in the picture. They were much less brown, but still good. I’d make it again, b/c I like healthier recipes.
This resipe is great! I made a few changes since I’m on a salt restricted diet. I put the olive oil in a large zip lock bag after it cooled and added some Mrs. Dash Extra Spicy seasoning and tossed the fries in and shook it up to coat the fries evenly. Mmmm. Spicy fries! As other people have already posted, check the fries after 15 minutes – oven temperatures vary. Thank you Aida!
I made four batches of these last weekend and they came out great. I tried to bake too many at one time on the last couple of batches so make sure you don’t over stuff the baking pan. I cut them both thin and thick and they worked both ways for me.
