Olive-Brined Air-Fryer Turkey Breast

An easy recipe for air-frying a flavorful, juicy turkey breast. The breast gets flavor from the olive brine and is kept soft at the same time. For more zing, I add hot Tabasco® Olive brine. With cranberry sauce, please.

Ingredients

  1. ¾ cup brine from a can of olives
  2. ½ cup buttermilk
  3. 3 ½ pounds boneless, skinless turkey breast
  4. 1 sprig fresh rosemary
  5. 2 sprigs fresh thyme

Instructions

  1. Whisk together olive brine and buttermilk. Put the turkey breast into a resealable plastic bag and pour brine-buttermilk mixture into the bag. Add rosemary and thyme sprigs. Seal bag and refrigerate for 8 hours.
  2. Take the bag out of the fridge and allow to rest until the breast reaches room temperature.
  3. Preheat an air fryer to 350 degrees F (175 degrees C).
  4. Cook the breast in the air fryer for 15 minutes. Flip over the breast and cook for 5 minutes until turkey breast is no longer pink in the center and the juices run clear. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). If internal temperature is lower, keep cooking at 5 minute intervals until the correct temperature is reached.

The flavor on this was fantastic. For the brine I used jalapeño stuffed olive juice and dried spices. I used bone in, skin on 1/2 breast. It was a little under 3 pounds. I set the temp and time for 350 @ 30 minutes. I placed it skin side down and flipped it halfway. When I checked the temp it was about 120 degrees. I added another 8 minutes. Checked again 140. I add another 10 minutes and let it rest for 8. When I cut it it was undercooked at the bone. I sliced it and put the lice’s in the air fryer for 5 minutes it was tough. I’ll try it again and make sure to time it with the rest of dinner.
