Ingredients
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 tablespoon white sugar
- 1 teaspoon salt
- 1 ¼ cups milk
- 3 tablespoons butter, melted
- 1 egg
- cooking spray
Instructions
- Sift together flour, baking powder, sugar, and salt in a large bowl. Whisk in milk, melted butter, and egg until combined. Let batter rest for 5 minutes.
- Preheat a large skillet over medium-high heat. Spray with cooking spray.
- Pour batter into the hot skillet, about 1/4 cup batter for each pancake. Cook until bubbles appear on the sides and center of each pancake, 2 to 3 minutes. Flip and cook until the bottom is golden, 1 to 2 minutes.

Recipe as posted is 2 stars. Every recipe is a starting point for you to tweak to your taste. Having said that, the second time I made these pancakes I added a 1/2 teaspoon pure vanilla extract and reduced salt to 1/2 teaspoon fine sea salt. Also reduced the baking powder to 2.5 teaspoons. To compensate for the lower amount of baking powder, I whipped the egg white separately to the soft peak stage and folded it into the batter just before cooking the pancakes. Pancakes were light, fluffy and delicious.
Great pancake recipe. My batter came out a touch thicker than in the video but that just made them better in my opinion. The recipe is a great base to work off. I add one peeled and diced Granny Smith apple that is lightly sautéed in a tablespoon of butter, a tablespoon of brown sugar and a pinch each cinnamon, nutmeg (freshly grated of course) and allspice. I add a teaspoon of cinnamon to the dry ingredients. Makes some great apple cinnamon pancakes!
Simple and easy to whip up in the morning, add some blueberries or maybe vanilla to give some extra flavor

Worried about bitterness mentioned in the other reviews, so I decreased the baking powder to 3 tsp, the salt to 1/4 tsp and increased the sugar to 2 T. I also added a tsp of vanilla. The batter is VERY thick! I think I’ll use 1 1/2 cups milk next time. Also, not medium high heat! It overbrowns before cooking through. I’ll use this recipe again, but with this changes.
was not expecting them to turn out like this. I think i may have done something wrong the batter in my opinion was too thick some of the pancakes ended up being slightly raw in the middle because of that even though i followed the instructions:( overall very tasty definitely not too salty i would not make them again though based off of personal pancake preference
The best pancake recipe and Chef a John is one of the greatest. To the 1 star reviews below – try using Kosher salt not iodized table salt and in addition educate yourself before you ever review a darn thing again. Review bombing Chefs ppfffff. Simply dumb.
Excellent texture and flavour! My batter was fairly thick but I was okay with that. I didn’t find this too salty at all. I used kosher salt at the amount listed in the recipe. I wonder if table salt is what’s making them too salty for some reviewers. Or if they accidentally used 1T instead of 1t. We’ve all done that at some point!
Wayyy too salty!! Probably the worst pancake recipe I’ve ever followed. I wish I chose literally any other recipe. Do not use a teaspoon of salt, that’s insane!!

I was going to make some pancakes for my family and realized they didn’t have any pancake mix and then I thought wait a minute I could make my own pancake mix ,so I use this recipe and my son said it reminds him of when he was a little boy
It was actually good! My batter came out with 3 large ones and enough for 1 mini pancake! It was a slightly salty taste but it does not effect the taste
Easy to make and turned out light and fluffy. I substituted date sugar for the granulated sugar, coconut oil for the butter and vanilla unsweetend almond milk for the milk.
Recipe turned out a little too thick so I just added a little more milk and it was perfect! Kids loved the pancakes!!
Best pancakes! Been making chef John’s recipe for years. Never change a thing and I always get compliments on my pancakes! I did just notice that allrecipes no longer has the button to adjust the serving size which then automatically adjusts ingredient quantities for you. That was one of my favorite features of this site 🙁 Ugh now I actually have to do math?! Noooo! Haha
Fluffy inside, crispy out edges. I added less salt and a teaspoon of vanilla. I also used cake flour instead of sifting. Perfect!! Can’t post a picture—all gone.
