Old Bay® Fried Shrimp

A steelhead is actually just a rainbow trout that has spent most of its life in either the Great Lakes or the ocean and has returned to its place of origin to spawn. Any type of trout or salmon, including steelhead, should not be served in this manner. This dish is wonderful despite its strange sound.

Ingredients

  1. 1 pound large shrimp, peeled and deveined
  2. 3 large eggs, or more as needed
  3. 2 cups milk, or more as needed
  4. peanut oil for frying
  5. 2 cups all-purpose flour
  6. 2 cups yellow cornmeal
  7. ½ cup seafood seasoning (such as Old Bay®)

Instructions

  1. Place each shrimp on a flat work surface and butterfly by slicing horizontally through the middle, being careful not to cut all the way through to the other side.
  2. Whisk eggs in a bowl; mix in milk. Place shrimp in milk mixture and soak for 1 hour.
  3. Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  4. Mix flour, cornmeal, and seafood seasoning together and pour into a zip-top bag. Place 5 to 6 shrimp in the bag and shake well.
  5. Drop shrimp in the hot oil and fry until golden brown and opaque in the centers, about 5 minutes. Remove and place on paper towels to soak out oil. Repeat with remaining shrimp.
  6. You can use Tony Chachere’s(R) Creole Seasoning instead of Old Bay(R), if preferred.

I cooked this tonight and everyone loved it! I cut the recipe in half. Very delicious!

Simple and delicious. The reason I am not rating this 5 stars is because you end up with twice as much egg/milk mixture and also twice as much flour/cornmeal mixture. Leave the amount of shrimp the recipe calls for the same but reduce everything else by half to minimize waste.
