A Japanese pancake called an okonomiyaki is filled with deliciousness! The basic okonomiyaki recipe is represented by the ingredients provided. Feel free to include any additional meats or vegetables. Play around with the ingredients if you like!

Ingredients

  1. 1 cup all-purpose flour
  2. ⅔ cup water
  3. 4 cups chopped cabbage
  4. 6 strips cooked bacon, crumbled
  5. 2 eggs
  6. 1 sausage, diced, or more to taste (Optional)
  7. ½ cup chopped green onions
  8. ¼ cup cooked shrimp (Optional)
  9. ¼ cup shredded cheese (Optional)
  10. ¼ cup tenkasu (tempura pearls)
  11. 1 tablespoon vegetable oil, or to taste
  12. 2 tablespoons soy sauce
  13. 1 tablespoon ketchup
  14. 1 teaspoon white vinegar
  15. 1 tablespoon panko bread crumbs, or to taste
  16. 1 teaspoon mayonnaise, or to taste

Instructions

  1. Mix flour and water together in a bowl until smooth. Stir in cabbage, bacon, eggs, sausage, green onions, shrimp, cheese, and tenkasu.
  2. Preheat a griddle to 400 degrees F (200 degrees C) and coat with oil.
  3. Pour 1/4 of batter onto preheated griddle. Cook until golden brown, about 6 minutes per side. Transfer to a serving plate. Repeat to make a total of 4 pancakes.
  4. Make sauce: Mix soy sauce, ketchup, and vinegar together in a small bowl. Drizzle over pancakes.
  5. Garnish with panko and mayonnaise.
  6. For a spicy okonomiyaki sauce, add cayenne pepper.
  7. Substitute crumbled saltine crackers for the panko bread crumbs if desired.

This was very good. My Japanese DIL purchased squid flavored tenkasu, which went well with the shrimp. I’ll definitely make it again. I made it quicker to assemble by cooking the bacon and shrimp the night before, as well as chopping everything then, too. The “tenkasu (tempura pearls)” is very similar to the little bits and crumbs that are formed when you deep fry. I think a can of French’s deep fried onions would be a viable substitute if you put them on top of the cooked pancakes, rather than inside the batter.

Since it is easy to add and omit ingredients you can customize the recipe to fit your tastes. Changes I made to recipe were the use of gluten free all purpose flour, shrimp and crab for proteins, no cheese or tempura pearls. Very good!

I would say to double the sauce (I just mixed it all and it didn’t look pretty but it sure was tasty). Very different cuisine for me. I loved it! Definitely making these over pancakes for breakfast. I made it gluten free by doing 1/2 C potato starch and 1/2 C tigernut flour (any GF flour would work). I also added jalapeños.

Very delicious! easier to make, cook and turn several smaller pancakes than one big one. bean sprouts are a nice addition. Can be made veggie using tofu instead of bacon and sausage or with shrimp or fish for those who enjoy seafood.

Okonomiyaki is such a comfort food for me because I grew up with it. There are two ways of making this dish — the Kansai (Osaka) style and the Hiroshima style. This recipe is giving you the Kansai style, which is mixing everything together and then pan frying. The Hiroshima style is my preference, which is layering and flipping and layering and flipping. LOVE this so much. My filling ingredients were cabbage, green onion, and spam because I had it on hand. I also added yakisoba noodles, which is another popular ingredient. This sauce is AWESOME. You can also mix worcestershire sauce with tonkatsu sauce and ketchup. Love the suggestion for panko as a topping, along with mayonnaise (use kewpie)….Thank you sooo much! Oh, ps, the tapioca pearls are interesting…I’ll need to do that in the future!
