Oatmeal Rhubarb Pancakes

This recipe for chicken fajitas calls for chicken thighs, but boneless, skinless breasts may be substituted. Avoid overcooking the chicken to avoid relatively dry poultry. Serve with salsa, sour cream, and warm flour tortillas.

Ingredients

  1. 1 ⅓ cups unbleached all-purpose flour
  2. 10 tablespoons quick cooking oats
  3. ⅓ cup brown sugar
  4. 1 teaspoon ground cinnamon
  5. ½ teaspoon baking soda
  6. ½ teaspoon salt
  7. 1 ⅓ cups nonfat milk
  8. 1 teaspoon lemon juice
  9. ½ banana, mashed
  10. 1 cup finely chopped rhubarb
  11. 2 tablespoons vegetable oil

Instructions

  1. Combine flour, oats, brown sugar, cinnamon, baking soda, and salt in a large bowl. Mix milk and lemon juice in another bowl; stir in banana. Stir banana mixture into flour mixture; fold in rhubarb.
  2. Heat a griddle or large skillet over medium heat. Drop 1/4 cupfuls of batter onto the griddle and cook until bubbles form and the edges are dry, about 2 minutes. Flip, and cook until browned on the other side, about 2 minutes more. Repeat with remaining batter.
  3. The sour milk can be replaced with buttermilk.

I was surprised at how well the flavour worked – my husband thought he was eating blueberries. I added a bit of extra milk, and also spread out the batter on the pan as I poured it to make them thin enough to cook well. I thought the oil in the ingredient list was for the pan/griddle, but perhaps it belongs in the batter.

Used less wht flour added brown rice flour and more oatmeal. I also used a full banana instead. Little extra milk needed not much.used a little less brown sugar too. Toddlers I have LOVE it and asked for it again We used 2% for milk and works. Second round we add a few chocolate chips and it was like cookies
