Oatmeal Energy Bars

Making poke bowls is excellent since you can mix and match the toppings to go with the primary ingredient. It is smoked salmon in this instance. You can quickly prepare dinner because the smoked salmon simply has to marinate in six ingredients for 30 to 45 minutes.

Prep Time: 15 mins
Cook Time: 15 mins
Additional Time: 10 mins
Total Time: 40 mins
Servings: 24
Yield: 24 servings

Ingredients

  1. 1 ⅓ cups rolled oats
  2. ½ cup all-purpose flour
  3. ½ cup vegan semi-sweet chocolate chips
  4. ½ cup ground unsalted cashews
  5. 2 tablespoons shelled unsalted sunflower seeds
  6. 1 tablespoon ground flax meal
  7. 1 tablespoon wheat germ
  8. ½ teaspoon ground cinnamon
  9. ¼ teaspoon sea salt
  10. ½ cup honey, warmed
  11. ⅓ cup almond butter
  12. ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a 9×11-inch baking dish with aluminum foil.
  2. Whisk oats, flour, chocolate chips, ground cashews, sunflower seeds, flax meal, wheat germ, cinnamon, and sea salt together in a large shallow bowl.
  3. Stir warmed honey, almond butter, and vanilla extract together in a bowl until well-mixed. Pour honey mixture into oat mixture; stir until batter is well-combined. Turn batter out into prepared baking dish. Lay a sheet of waxed paper over batter and press firmly to evenly distribute in the baking dish. Remove and discard waxed paper.
  4. Bake in the preheated oven until golden and fragrant, about 12 minutes. Pull aluminum foil from baking dish and cool bars in the aluminum foil for 10 minutes; remove and discard aluminum foil. Cut into bars.

I thought it had a wonderful flavor. Used tart dried cherries and pecans. Just a little crumbly but wonderful.

I used dark chocolate in place of semi sweet and added 3 T chia seeds. Yummy!!!
Rita Torres
These turned out very good. They are small servings. I wouldn’t compare them to an oatmeal cookie at all, more like a granola bar. My 9 year old didn’t like them though.

The amounts seem to be off. 160 cups of chocolate chips is way too much!

Easy and tasty, but they fall apart after cooking.

Omited chocolate chips and spread bottom of bars with chocolate. Added 1T chia seeds. Used peanut butter in place of almond butter. Will definitely make these again.

These are not vegan, as they contain honey. Pleas change your description of them from vegan to vegetarian. Thanks!
