Ingredients
- 3 dates, pitted
- 3/4 cup unsalted raw almonds
- 1/2 cup unsweetened coconut flakes
- 1/2 cup rolled oats
- 1/4 teaspoon kosher salt
- 1 tablespoon creamy peanut butter
- 2 teaspoons vanilla extract
- 1/2 cup mini chocolate chips
Instructions
- Soak the pitted dates in 1/4 cup hot water for 5 minutes; reserve the water.
- In a food processor, combine the almonds, coconut flakes, oats and salt. Pulse until a fine meal forms. Add the peanut butter, soaked dates, 3 tablespoons of the reserved soaking water and the vanilla. Process until the mixture forms a cookie-dough consistency. Transfer the mixture to a bowl, then fold in the chocolate chips.
- Line a baking sheet with parchment paper. Using an ice cream scoop, portion the dough onto the baking sheet. Refrigerate until the dough is chilled and set, about 20 minutes. Store in the refrigerator in an airtight container with parchment in between the layers.

Great healthy cookie recipe. My kids and their friends loved it! I made a few modifications:
1) Used steel cut quick cook oats instead of rolled oats
2) Soaked the almonds in almond milk for a few hours (2-3) prior to chopping them.
3) Used 5 dates instead of 3 ; it wasn’t quite sweet enough for me with 3 dates
4) Replaced peanut butter with roasted sunflower butter instead
5) Used 2 tablespoon of date water and 1 tablespoon of almond milk from the soaked almonds
Delish I needed to add a bit more peanut butter because it was not sticking together, but they were really good!!!
I’ve made these twice now. The first time was fairly unsuccessful, a fine consistency with the almonds, coconut flakes, and oats was never achieved. It took quite a while to get it as fine as I did but it definitely turned out more like a granola bar type consistency. I didn’t love the result but they were good. The second time I made this, I used the leftover almond “crumbs” from making almond milk, so the almonds had been pre-soaked and ground up beforehand. I followed the recipe again and it turned out much better, I believe the moisture from presoaking the almonds and the fact they were already a fine consistency made all the difference! I ended up with a more moist cookie dough consistency as opposed to the dry-ish, chunky consistency I had the first time around. I’ll be making these more often. Thanks!
Excellent healthy after school energy snack for kids who need something if they have extracurricular activities and don’t get home right after school. As suggested by a reviewer below, I froze these and put these in my daughter’s lunch box to eat before she goes to the gym.

A nice healthy snack, kind of like a granola bar. However, NOTHING like raw cookie dough. The kids weren’t fooled.
Yummy. I use certified gluten-free oats. They are amazing, gluten-free, no-bake treats with lots of nutritional punch.
Teenagers love it – and are freezing and then taking to school! They say that it tastes like a ‘Cliff” bar. If you find that you are out of Peanut Butter (and your family forgot to tell you even though you just went to the store), you can substitute Nutella.
