Great with handmade biscuits or on waffles, this simple recipe for delectable apple jam is produced in a Vitamix® machine.

Ingredients

  1. 2 teaspoons vegetable oil
  2. ⅓ cup chopped onion
  3. 2 (15.5 ounce) cans lentils, drained
  4. 1 (14.5 ounce) can petite diced tomatoes, undrained
  5. 1 (1.25 ounce) package McCormick® Original Chili Seasoning Mix
  6. 2 tablespoons crumbled goat cheese or feta cheese

Instructions

  1. Heat oil in large skillet on medium heat. Add onion; cook and stir 2 to 3 minutes or until translucent.
  2. Stir in lentils, tomatoes and Seasoning Mix. Bring to boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally.
  3. Spoon into serving bowl. Sprinkle with cheese.
  4. Serve dip with baked or low-fat tortilla chips or cut-up fresh vegetables.

Loved it!! I made this for s family gathering and they loved it. I could not find can lentils so I used 3 cups of cooked lentils, which I cooked according to the packaging instructions. Aside from that I made the recipe as written and served it warm topped with crumbled feta along tortilla chips. Delicious!! I froze the leftovers to serve with tacos or burritos.
