No-Bake S’mores Bars

Ingredients

  1. Nonstick cooking spray, for the pan
  2. 4 tablespoons salted butter
  3. One 10-ounce bag mini marshmallows
  4. One 12-ounce bag semisweet chocolate chips
  5. Pinch of kosher salt
  6. 9 graham crackers, broken into pieces
  7. 1/4 cup mini chocolate-coated candies
  8. 2 tablespoons rainbow sprinkles

Instructions

  1. Line a 9-inch square baking pan with waxed paper, overlapping all 4 sides. Spray with cooking spray.
  2. Place a nonstick pan over low heat and add the butter. When melted, add two-thirds of the marshmallows and cook, stirring, until the marshmallows have melted and combined with the butter, about 3 minutes. Next, fold in the chocolate chips and stir until they are melted too. Add the salt and half of the broken graham crackers and stir so the cracker pieces are incorporated into the chocolate marshmallow mixture but not broken up too much.
  3. Tip the mixture into the prepared pan and press it into the pan with a wooden spoon. Sprinkle over the remaining graham crackers and marshmallows, pressing them down with your hands so they set into the base. Next, add the coated candies and sprinkles and press them down.
  4. Allow to set for 1 hour before removing from the pan and cutting into bars. Or you can chill for 10 minutes and slice if you’re in a hurry!

These were easy to make. The base was good but the toppings did not stay on. It was too much topping and did not stick to the base. I think less graham crackers next time and maybe pulsed to crumb texture instead. Need to move fast. Once the butter and marshmallow melted together, need too add chocolate quickly, mix continuous and get into prepared pan. Base is sticky and thick. Will make again with adjustments.

Can’t wait to try. Looks delicious. I’m a visual learner. Would be helpful with a video, or a link to the episode as to how it is made, as I am substituting the graham crackers with something else. I know it is pretty easy, but I like the visual to see just how much I would need to substitute.

S’mores are tricky unless you’re at a campfire. So I’m always looking for an alternative to make ahead. The trick of this is the speed at which you have to move to make it work. After the gentle hearing of the butter, your hands can not be off the process for about 15 minutes. Have everything prepped. Pre mix the toppings. When you dump the mix from the mixing pan to the serving pan, have that pan on the burner you just turned off. And press the toppings in quickly. The taste is good and they look special.

I really wanted these to be good. They taste great but are a weird texture with the marshmallows, chocolate chips and graham cracker pieces. They are difficult to cut and the toppings don’t stay on. Very disappointing

We loved this, and so did my sister’s household with lots of kids! I accidentally forgot to include the salt the last time, so I sprinkled it on top and it turned out to be a delicious variation that helped balance the sweetness!
