No-Bake Peanut Butter, Chocolate and Pretzel Bars

Ingredients

  1. 12 tablespoons unsalted butter
  2. 1 cup graham cracker crumbs
  3. 1 cup confectioners’ sugar
  4. 1 teaspoon vanilla extract
  5. 1 cup plus 1 tablespoon creamy peanut butter
  6. 1 cup semisweet chocolate chips
  7. About 1 1/2 cups pretzel sticks

Instructions

  1. Line an 8- or 9- inch square baking pan with foil.
  2. Melt 8 tablespoons of the butter and add to a large bowl. Add the graham cracker crumbs, sugar, vanilla and 1 cup of peanut butter and stir until well combined. Transfer the peanut butter mixture to the prepared baking pan and smooth with an offset spatula to create an even layer.
  3. Combine the chocolate chips, the remaining 4 tablespoons butter and the remaining tablespoon peanut butter in a medium microwave-safe bowl and microwave in 30-second intervals, stirring after each, until melted. Alternatively, this can be done over a double boiler. Pour the chocolate mixture over the peanut butter and smooth with an offset spatula. Arrange the pretzel sticks on the surface of the chocolate, pressing them lightly to adhere. Refrigerate until hardened, about 1 1/2 hours. Cut into squares to serve.

Very good, very easy to make but a couple of reviewers were right to question the butter. On the show Valerie says she adds a 1/2 stick of butter to the chocolate chips to melt. And then she says to melt and add 12 tablespoons of unsalted butter to the peanut butter, the powdered sugar and the cracker crumbs so that’s how I am going to make it. Perhaps someone will fix the recipe listed above.

Super easy to make! Next time I would use a pan a little larger. The peanut butter crust is very rich . I would enjoy a thinner layer…but all in all definitely a keeper!

In the recipe it says 12 tbsp. butter total. 8 for the bottom layer and 4 for the top. However in the video, Valerie says 12 tbsp melted butter in the bottom layer and 4 in the chocolate layer. Which is it?

This was a delicious dessert bar. The texture was perfect – I was able to refrigerate them cut them into squares in 2 hours. I might add a little more confectioners sugar to make the a tiny bit sweeter next time.
