No-Bake Nutella Oatmeal Cookies

In the United States, anything seasoning is in. It may have started out on bagels, but it’s such a rich, versatile mixture that it tastes great on just about “everything,” including deviled eggs.

Ingredients

  1. 2 cups white sugar
  2. ½ cup butter
  3. ½ cup milk
  4. ¼ cup cocoa powder
  5. ½ cup chocolate-hazelnut spread (such as Nutella)
  6. 2 teaspoons vanilla extract
  7. 3 cups quick-cooking oats

Instructions

  1. Combine sugar, butter, milk, and cocoa in a medium saucepan over medium heat; stir until smooth. Bring to a rolling boil; continue to boil for at least 1 minute.
  2. Remove from heat. Stir in chocolate-hazelnut spread and vanilla until dissolved. Return the pot to the still-warm burner, or the lowest setting on a gas stove, and add oats. Mix well.
  3. Leave the pot on the warm burner while you drop cookies by heaping spoonfuls onto a sheet of wax paper. Let cookies set before serving.
  4. Do not substitute margarine for butter.
  5. You can substitute smooth peanut butter for Nutella.
  6. You should not refrigerate the cookies; if you do, they will lose that no-bake shine.
  7. The cookie “dough” cools very fast, so it needs to be kept on the warm burner to scoop easily. Otherwise, the last of it will harden before you can scoop it.

My daughter does not like peanut butter, so this will be a nice change for her. I made it exactly as directed with the exception of I boiled it for two minutes. They came out great.

I use this recipe to jump off of all the time. It’s great because the cookies don’t end up runny or crumbly as they tend to with some other recipes. I add nuts – pistachios or pecans or whatever’s on hand – and some coconut as well.

I cut back and only used half the amount of sugar {I use organic sugar in the raw} the Nutella is already sweet. It was still almost too sweet. Next time, I will go with only 3/4 cup of sugar and see if it isn’t a little better. I just don’t believe there is any need for a bunch of extra sugar in this recipe. I also added 2 kitchen sized tablespoon from the silverware drawer, slap full of organic peanut butter, no measuring it} and, OMG!!!! THEY ARE SSSOOO GOOD!!!! Addictive is what they ended up being.

Used hazelnut flavouring instead of vanilla to boost the nut flavour. Also used more oats to cut down on the sweetness. Have made these several times. So easy and good.
