No-Bake Chocolate Coconut Cookies

Why is it that everyone is being good and promoting healthy recipes now that the new year has begun, but I am luring you with a dish that is incredibly unhealthy? Perhaps you’re thinking if the title was a mistake. Though it’s not! Due to its popularity during luncheons held following funerals, this side dish has earned its moniker. You can, thank goodness, enjoy this creamy, cheesy side dish whenever you want, so don’t worry.

Ingredients

  1. 3 cups quick cooking oats
  2. 1 cup sweetened flaked coconut
  3. 2 cups white sugar
  4. ½ cup unsweetened cocoa powder
  5. ½ cup milk
  6. ½ cup margarine

Instructions

  1. Line a baking sheet with waxed paper.
  2. Mix oats and coconut in a large bowl until thoroughly combined.
  3. Stir together sugar, cocoa powder, milk, and margarine in a saucepan over medium heat until smooth. Bring to a boil and cook, stirring constantly, for 2 minutes. Pour over oats and coconut; mix quickly to coat.
  4. Drop tablespoonfuls onto the prepared baking sheet. Let cookies cool and harden, then store in an airtight container.

I agree with several other reviewers; there is a large amount of oats here for the amount of syrup produced. I will make these again (with the addition of 1 cup of chopped nuts) with the syrup amounts doubled.

My husband’s mother made these for him when he was a kid. He loves them!! I used butter but that’s all I changed.

THE BOILING TIME IS WRONG!! 2 mins is NOT enough time to dissolve the sugar. 5MINS BOILING TIME REQUIRED! Mom would also say “don’t touch it!”, if we went to stir. She said this recipe is similar to candymaking in that you have to melt the sugar or we would have a grainy loose (but still delicious) mess instead of cookies. I use butter instead of margarine, as well. Another tip I use: Press the mixture into a pan and refrigerate, then cut into bars. Saves alot of time. I also use this recipe as a “crust” for ice cream cakes.

I read all the reviews before I tried the recipe. I decided to try it exactly as it’s written. I had extra coconut on hand in case it looked like it needed a little more and I probably added one handful more of coconut. I give this to five because it turned out very well and The taste is excellent. I did add the teaspoon of vanilla to the mixture on the stove and it really gave it good flavor. Enjoy

Following other suggestions to add 2 cups of coconut it was a dry mess. So not the recipes fault but mine but just a warning to try it as is

I made these exactly according to the recipe, only adding 1 tsp of vanilla. I followed others’ suggestion to STIR continuously. They came out perfectly – not grainy or crumbly. (I also timed it – 2 minutes – after the mixture came to a boil. ) Taste and texture are exactly as I remembered them when I was a kid 🙂

I love to make cookies for my kids. I have made so many different kinds. I remembered my mom uses to make these kinds if cookies all the time when I was a kid so I wanted to do the same for my kids. I had no recipe and had to find one. I read the reviews for this one and the changes people made. So I gave it a go. They turned out so good they are now officially the family favorite. The only thing i did different is change the margerine for butter. And added maybe a 1/4 more coconut then it asked for cause well, we love coconut. They turned out perfect each time and this is now the third time. Also I read some let the butter melt before adding other stuff to saucepan. I did the same and it worked great. Well all I had was unsweetened coconut and this may be the reason my cookies were dry and/or I took the advice of a reviewer and doubled the coconut. Either way, these became too dry to form into balls once they started to cool slightly. I will try these again with the sweetened coconut and follow the recipe as is!

meh, it’s ok…. always looking for something different. my husband was disappointed they weren’t the no bake cookies with peanut butter….. looks can be deceiving lol. they were yummy but lacked flavor
