Nick’s Eggnog Pie

I tried a couple eggnog pie recipes but couldn’t find one that was sufficiently eggnoggy. I experimented a lot and produced a lot of fairly good pies that weren’t what I was searching for before I achieved the outcomes I liked. I’m not really familiar with technical jargon. This pie actually tastes like eggnog and has a similar texture to pumpkin pie.

Ingredients

  1. 1 (9 inch) pie crust pastry
  2. 2 cups eggnog
  3. 1 cup white sugar
  4. ¼ cup cornstarch
  5. 2 eggs
  6. 2 egg whites
  7. 1 tablespoon vanilla extract, or to taste
  8. 1 tablespoon ground nutmeg, or to taste
  9. 1 tablespoon ground cinnamon, or to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Press pie crust into a 9-inch pie dish and cut excess crust from edges; fill with rice or pie weights.
  2. Bake in the preheated oven until lightly browned, about 10 minutes.
  3. Beat eggnog, sugar, cornstarch, eggs, egg whites, vanilla extract, nutmeg, and cinnamon together in a bowl until smooth; pour into crust.
  4. Bake until pie is set in the middle, 50 to 60 minutes.
  5. This might work better if a water bath is used to bake but I didn’t have the means to try it.

The whole house smelled like eggnog while I was cooking this. A word of caution. The amount of cinnamon and nutmeg listed is way too much. It does say season to taste but I would start out with a teaspoon of each and go from there. I made it with the amounts listed and it’s way too spicy.

No, I didn’t make it, but I love Eggnog, and I’m a good judge of ingredients. Sometime between Thanksgiving, and Christmas I’ll be making this for either a family get together, or a potluck at church. I’m sure the eggnog lovers in my family, or those at church will be surprised by the uniqueness of this pie.

Was amazing…family loved it..now going to be added to the family tradition every Thanksgiving ! Had a great flavor and the aroma was strong of eggnog, plus the family members that hate eggnog thought it still was amazing and this recipe was easy to mix together.
