The best cookies I’ve ever made—possibly the best cookies I’ve ever made—are not only eggless cookies. Instant pudding mix is the secret ingredient!

Ingredients

  1. cooking spray
  2. 4 cups cornbread mix (such as Marie Callender’s®)
  3. 1 tablespoon baking powder
  4. ¾ teaspoon pumpkin pie spice (Optional)
  5. 1 (15 ounce) can pumpkin puree
  6. 1 ½ cups water

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Spray 21 muffin cups with cooking spray.
  2. Stir cornbread mix, baking powder, and pumpkin pie spice together in a large bowl. Add pumpkin puree and water to cornbread mixture; stir until batter is just-combined. Divide batter between prepared muffin cups.
  3. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.

These came out rather doughy. Not sure if the extra tablespoon of baking powder was necessary since I used Bob’s Red Mill Gluten-Free Cornbread Mix… I also used milk instead of water, too.

I had to sub a half cup almond flour since I only had 3.5 cups cornmeal-I just used straight cornmeal and even that way with the almond flour is still good! Great with maple syrup! I bet it would taste even better if I had a cornbread mix instead of just corn meal

Made these on Christmas Day to go with ham and all the traditional sides. Were delicious!!!! (can’t remember for sure, but took at least 2 boxes of Jiffy mix, maybe 3)

Awesome! Just made a couple of tweets for my own taste and dietary needs. Replaced 1/2 cup of the water with milk, 1 egg, couple of Tbls ground flax seed and a tiny spot of ground ginger.
