Mustard Potato Salad

potato salad with sweet mayonnaise and mustard. There are no potato bits left because the potatoes have been entirely pureed. It’s excellent, and I learned the recipe from my wife’s grandma (without any measurements). Serve warm, cold, or hot. Easily prepared in advance and kept cold for one or two nights.

Ingredients

  1. 5 pounds potatoes, peeled and diced
  2. 1 ½ cups mayonnaise
  3. 1 medium onion, finely diced
  4. ¼ cup yellow mustard
  5. ¼ cup milk
  6. 3 tablespoons butter, cut into pieces
  7. 2 tablespoons sweet pickle juice
  8. 1 teaspoon salt
  9. ½ teaspoon ground black pepper
  10. ½ teaspoon ground paprika, or more to taste
  11. 10 medium sweet pickles, diced
  12. 6 large hard-cooked eggs, divided

Instructions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until fork-tender, about 20 minutes. Drain.
  2. Transfer potatoes to a bowl and blend with an electric mixer. Add mayonnaise, onion, mustard, milk, butter, pickle juice, salt, pepper, and 1/2 teaspoon paprika; blend until smooth. Blend in pickles. Dice 5 eggs and blend into the mixture. Taste and adjust seasonings as needed.
  3. Transfer to a serving bowl and smooth the top with a rubber spatula. Slice the remaining egg in half lengthwise and press on top. Garnish with paprika.

I have been making this sweet pickle potato salad all of my cooking life. I use leftover mashed potatoes when I have some or I boil potatoes. Sweet pickle juice is the secret to the great taste of this salad.
