Lentils and mushrooms combine to make a vegetable burger that is worth making! Even though the mushrooms have a beefy flavor, I prefer to amp it up by combining steak sauce and mayo to spread over the bread for even more “beefy” flavor.

Ingredients
- 2 cups cooked brown lentils
- 1 (6 ounce) package sliced fresh mushrooms
- 1 tablespoon spicy brown mustard
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¾ cup dry bread crumbs
- 1 large egg, beaten
- 1 tablespoon vegetable oil
Instructions
- Combine lentils, mushrooms, mustard, garlic powder, Italian seasoning, salt, and pepper in a food processor; pulse to combine.
- Transfer mixture to a large bowl. Add bread crumbs and egg; mix until evenly combined. Shape mixture into 6 equal-sized patties.
- Heat oil in a large skillet over medium-high heat. Place half of the patties in the skillet and cook for 5 minutes. Carefully flip and cook for 5 minutes more. Repeat with remaining patties.
