Instructions

  1. Cook 2 sliced onions in 2 tablespoons olive oil until caramelized, 20 to 25 minutes. Saute 3/4 pound sliced cremini mushrooms in 2 tablespoons butter. Cook 1 1/2 cups quick-cooking barley in chicken broth as the label directs, then toss with the mushrooms, onions, some dill and salt.

I made this with the quick cooking barley that I bought awhile ago when I could not find regular barley.  I made the recipe as written but without the herbs ….did use minced garlic…..this was really good….cooked the barley in beef broth made with Better than Bouillon.  This is a great side dish….very flavorful.   Don’t use any extra salt as the Bouillon is salty enough….I will make this again.

Very good recipe.  I substituted tomato sauce for the dill and I used linguine pasta instead of barley.  Sprinkle Parmigiano Reggiano for garnish.

My family really enjoyed this.  I think the recipe would probably be good as written but I cooked a cup of barley instead of 1.5 cups (I cooked it in 3 cups of water for around 40 minutes with 1.5 bouillon cubes). I also used regular white mushrooms since that’s what I had on hand. I sauteed them in olive oil instead of butter since my husband does not like butter.  Finally, I used different spices:  rosemary, thyme, parsley and basil instead of dill since I have those growing in my garden.  And I added paprika, a bay leaf, 3 whole cloves and garlic powder. It was great. My 5-year old daughter loved it and chose it over the main dish.

It’s five stars if you add garlic and soy sauce 😀 I was kind of suspicious about the dill so I didn’t add that either.
