Ingredients
- 1 pint (16 fluid ounces) cider
- 2 fluid ounces dark rum
- 9 fluid ounces apple and ginger tea, from herbal teabag
- 1 1/2 ounces soft dark brown sugar
- 2 clementines
- 4 cloves
- 2 sticks cinnamon
- 2 fresh bay leaves
- 2 cardamom pods
Instructions
- Pour the cider, rum and herbal tea into a wide saucepan. Add the sugar and place the saucepan over a low heat. Slice the clementines in half and stick a clove into each half. Add the clementines to the pan. Break the cinnamon sticks in half. Add the cinnamon, bay leaves and cardamom pods to the saucepan. Heat the saucepan until the mixture is almost boiling. Turn down the heat once the pan is near to boiling.
- To serve, ladle the mulled cider into heatproof glasses with handles.

I made this cider on Halloween.. Delicious, warm, comforting and extremely easy to prepare, it is the perfect drink for a chilly autumn night, curled up on the sofa with a scary book or horror film. Thanks, Nigella!

According to the version of this recipe published on the BBC Web site (which matched in every other way, but unfortunately seems to be no longer available), the cider quantity should be:
1L (Metric) or
1pt 15 fl oz (British pints/fluid ounces).

I believe this translates to:
2pt 2fl oz (US pints/fluid ounces).
I.e. there should be at least double the 1 pint of cider stated here!

This was amazing…the cider was tasty and warms you right up. Bonus: brewing it makes your home smell beautiful. I doubled the recipe, using 4 cups of cider and 1/2 cup spiced rum. I brewed two cups of tea – one ginger (Yogi Tea) and one apple cinnamon (Celestial Seasonings), since that is what I had in the cupboard – and added to the boiling mixture. Tip: press your whole cloves into quartered oranges so they stay put and still add all the necessary flavor! So simple, I will definitely make this again!
It was absolutely devine. It hit the spot on a cold evening outdoors roasting s’mores.
