Ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 3 eggs
- 1 ½ cups vegetable oil
- 2 teaspoons vanilla extract
- 2 cups white sugar
- 3 cups Granny Smith apples, thinly sliced
- ¾ cup chopped pecans
- ¾ cup chopped black walnuts
- 1 cup brown sugar
- ½ cup milk
- ½ cup butter
- 1 teaspoon vanilla extract
- 1 teaspoon mayonnaise
- 1 teaspoon vanilla extract
- 2 cups confectioners’ sugar
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Sift together flour, salt, baking soda, and cinnamon; set aside. Grease and flour an 8 inch Bundt pan.
- Whisk together eggs, oil, and 2 teaspoons vanilla extract until smooth. Mix in sifted dry ingredients until moistened, then fold in sliced apples, pecans, and walnuts. Pour batter into prepared Bundt pan.
- Bake cake in preheated oven until golden brown on top, and a toothpick inserted in the center comes out clean, about 1 1/2 hours. Stir together brown sugar, milk, butter, and 1 teaspoon vanilla extract in a saucepan. Simmer for 2 minutes, then pour over cake in the Bundt pan as soon as it comes out of the oven. Allow cake to cool in pan set over a wire rack until it is room temperature, about 4 hours.
- Whisk together mayonnaise, 1 teaspoon vanilla extract, and confectioners’ sugar until smooth. Unmold cake and place onto a serving plate, spread icing over the top.

I found the batter to be very stiff and hard to stir in the apples and nuts. also, the glaze is missing a liquid element that is needed. I added a little milk until it reached glaze consistency. the cake is extremely sweet, so my first will probably be my last.
The directions don’t tell you to add the sugar. And it is on the ingredients list. And the icing needed milk to make it smooth. I added 2 tsp. Vanilla and 1tsp. Mayonnaise and 2 cups of powdered sugar.
Sweet and moist!! Great with a cup of coffee on a cold day! Love.
This cake is an over kill. It was so sweet that we didn’t really eat much of it. The cake is good but not great and the additional saucing is not good and not necessary.
This was very good. My husband really liked it. I will be making it again, for Thanksgiving.

My co-worker brought this cake in to work, it was so good I asked for the recipe. It’s heavenly! She did say she’d cut the sugar down next time (it is very rich and can cover the apple flavor), but the mixture that you pour in to the cake is so delicious and gives the cake this melted coffee-cake topping crunchiness on the edges. Also, she added milk to the icing, since the mayo and vanilla aren’t enough to make the glaze.
I wasnt very happy with this recipe. I was so excited to make it because how great it looked and the reviews were positive. I found it having a bland taste, it was very gritty/crumbly. the topping was great though. it added flaver to the top of the cake when it sunk in. The icing didnt really wow me. I tasted a bit of it once creamed together, I felt the need to add a bit of milk to it. Then I heated it for about 45 seconds in the microwave. But my husband and I only ate one piece each. I was going to recommend this to my sister but not now.

Very moist and sweet. My husband and I enjoyed it, but were a bit surprised by the cake consistency…ours turned out almost like what you’d expect from pecan pie. Don’t forget to add the sugar in with the other ingredients!
Cake very moist. I found it excessively sweet with the two cups of sugar. I will make it again adjusting the quantity of sugar probably by half.
