Mom’s Carrot Banana Bread

There is no better baked oatmeal than this one, which serves a large number of people and has a top coating of caramelized brown sugar.

Ingredients

  1. 2 cups all-purpose flour
  2. 1 teaspoon baking soda
  3. ½ teaspoon baking powder
  4. ½ teaspoon ground cinnamon
  5. ¼ teaspoon salt
  6. 1 cup brown sugar
  7. ½ cup butter, softened
  8. 3 bananas, mashed
  9. 1 cup grated carrots
  10. 1 cup walnuts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 4×8-inch loaf pans.
  2. Combine flour, baking soda, baking powder, cinnamon, and salt together in a bowl. Beat brown sugar and butter together in a separate bowl using an electric mixer until smooth and creamy. Stir flour mixture, alternating with bananas, into creamed butter mixture just until batter is mixed; fold in carrots and walnuts. Pour into the prepared loaf pans.
  3. Bake in the preheated oven until a toothpick inserted in the center of a loaf comes out clean, 50 to 60 minutes.

i made some tasty banana bread. I was specifically looking for a banana bread that used carrots as i had some to use up and this didn’t disappoint. i only made a few tweaks. i added some extra spices that compliment cinnamon (cardamom & nutmeg), vanilla and instead of walnuts i used chocolate chips for a chocolate flavour. it worked out very nice.

I added some raisins and cut back a little on the brown sugar so it wasn’t so sweet. I made this in a 9×9 baking pan and baked it in our Cuisinart oven at 325 degrees for 20 minutes. It came out a little browner on the top, but still good. It’s definitely a keeper.

We loved this! I also made some changes based on reviews. I added 2 eggs and sprinkled the top with cinnamon and sugar before baking. I did the two loaves as called for. It does make a relatively small loaf but it was perfect for my family’s needs.

This bread was Excellent! I substituted 1/2 the butter for coconut oil and it turned out perfect! Next time I will try to do it with all the butter to make it dairy free.

Next time I think I’d make a slightly bigger batch. It calls for 8×4 bread pans, but mine are 9×5. So my loaves came out very short. But that’s not the recipe’s fault, that’s mine for using the wrong pans. Next time I’ll just beef it up and make 50% more batter. Oh and I added a cup of raisins. Yum. And I went hevy on the cinnamon (used twice as much). Very moist. Family loves it. Good recipe. =)

Made the bread. Followed the recipe to the letter. It called for two 8 x 4 loaf pans. Loaves came out about 2 inches high. Very dense and heavy. Did the toothpick test, which tested done and the bread had pulled away from the sides of the pan. That says done to me. It was the worst bread ever. Would never make it again. Even the flavor was terrible!

Very moist! Turned out just like the pictures. The consistency was dry so I added another banana. I also substituted dark chocolate for the walnuts. Turned out great!

No eggs, no oil, this was done exactly as recipe called for. It was awful. Carrots and bananas in this recipe didn’t go together!! I think she left out the main ingredients eggs and oil!

Turned out great. I was out of ap and used bread flour and cashews instead of walnuts. Next time I will add All spice as I prefer a more spicy bread. Bananas were small to medium which worked great. Used carrot pulp from the juicer. Next time I will add 50% more.

I didn’t get a strong taste of carrots or bananas. I used some of the suggestions in reviews. Added 1 egg for moisture , sprinkled super fine sugar on top of muffins(made about 18) Not sure what would be good to bring out the favors

Batter was so dry- added 2 eggs as recommended- was still quite thick, and had to spread it into corners of pan. It baked up nicely, bready textures bit dry. And not as sweet as cake. We just ate ours warm with ice cream! Delightful!
