Ingredients

  1. 1/2 cup fresh mint leaves, plus sprigs for garnish
  2. 2 limes, cut into wedges, plus more for garnish
  3. 2 cups crushed ice, plus more for serving
  4. 1 cup Lime-Mint Syrup, recipe follows
  5. 1 liter white rum
  6. 1/2 cup fresh lime juice
  7. Club soda
  8. 2 cups sugar
  9. 2 cups water
  10. 2 limes, zested
  11. 1/2 cup fresh mint leaves

Instructions

  1. Muddle the mint leaves and lime wedges with 2 cups crushed ice in the bottom of a large pitcher. Add Lime-Mint Syrup, rum, lime juice, and more ice. Top off with club soda, to taste. Pour into glasses over ice and serve. Garnish each glass with a lime wedge and mint sprigs, if desired.
  2. Bring the sugar and water to a boil in a medium saucepan and cook until the sugar is completely dissolved, about 1 minute. Remove from the heat, stir in the lime zest and mint, and let sit at room temperature for 30 minutes to infuse the syrup with the flavor of lime and mint. Strain out the mint and zest and refrigerate the syrup, covered, until cold.

Mr.Flay never dissapoints when it comes to flavor, but for me the drink is too strong. I cut the rum in half and I add club soda individually to each drink, Delicious!

I just made this last night for a dinner party. I had a giant bunch of mint and it was just begging to be used. I made up the batch of syrup and then just had it on “standby” when I mixed the actual drinks up one at a time. Worked great – I will remember this lime/mint syrup and use it as my golden standard when making mojitos in the future!

Had a housewarming party in mid July and this was the biggest hit of the party! Everyone loved, loved, loved it. Its super easy to make and you can really make it strong, but good, or dilude with extra club soda and still be just as delicious. The flavor is great, goes down easy and is fun for guests.
