I received this recipe from my aunt. These delicious muffins are a crowd favorite!

Ingredients

  1. 2 cups flour
  2. 1 teaspoon baking soda
  3. 1 teaspoon baking powder
  4. 1 cup white sugar
  5. 3 ripe bananas, mashed
  6. 1 cup mayonnaise
  7. ½ cup chocolate chips (Optional)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. Stir the flour, baking soda, baking powder, and sugar together in a bowl. Add the bananas, mayonnaise, and chocolate chips; stir until well combined. Pour into prepared muffin cups to about 3/4 full.
  3. Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.

Yes, I added 1/4 cup of black walnuts. Love this recipe. My neighbor aged 92 always used mayo inside of her baked cakes and breads. Best Texas sheet almond cake ever eaten. Baked goods with mayo are always moist.

Wow. Thank you so much for this awesome recipe. I used 4 medium over ripe bananas, and added 5ml cinnamon and 10ml vanilla essence. I mashed the bananas and mixed it with the mayo and vanilla. I baked it for 30minutes. It is soooo soft, and the most amazing flavor. This get a special place in my recipe book.

Made these for the first time today. It’s a good thing this is an easy recipe because I made them one-handed while talking on the phone with my sister — almost forgot the sugar! I was able to get 14 good-sized muffins out of it. I omitted the chocolate chips just because I wanted a “plain banana” flavor first time out. My muffins cooked in 20 minutes and came out very moist, with good flavor and not overly sweet. I will definitely make these again. Thanks for the recipe!

It was very dry mixing all ingredients. I added 1/2 cup of water, the chocolate chips, and 2 tsp. vanilla extract. My toaster oven was too small to use the 12 cup muffin tin I have. Had to pour it all in a rectangular bake glass. I ended up with burnt banana bread. Had to throw it in the trash.

These turned out great. I used VERY ripe bananas and substituted 1 cup of whole wheat flour (so 1 cup all purpose and 1 cup all wheat). Some of the best banana muffins I’ve had.
