Mixed Greens with Raspberry-Walnut Dressing

Ingredients

  1. 1/3 cup raspberry preserves
  2. 2 tablespoons olive oil
  3. 1 tablespoon red wine vinegar
  4. 1/2 teaspoon Dijon mustard
  5. Salt and ground black pepper
  6. 4 cups mixed lettuce greens
  7. 1/2 cup chopped walnuts

Instructions

  1. Whisk together raspberry preserves, oil, vinegar, and Dijon mustard. Season, to taste, with salt and black pepper. Arrange lettuce on salad plates. Top lettuce with dressing and walnuts just before serving.

Love this — it’s simple, easy, and healthy. Pair it with grilled chicken breast for a meal that is a bit more substantial. I am so mad that FN cut Robin’s show. I loved watching it. Her meals were simple and affordable and most of all they were fast and healthy. From now on, I just have to use her cookbooks but I miss seeing her show!

by the thickness of the dressing and added more olive oil and vinegar-just a little. I trusted the water in the vegetables to help dilute and spread-and i was right. Beyond that, think of the rest of it as an empty canvas. Mixed greens, yes. I added bite size pieces of grilled chicken-2 boneless breasts. I also added the chopped white part of a green onion and minced a few very thin slices of genoa salame and made it a one dish meal that mimics a raspberry chicken salad I like from Quiznos. I tossed most of the dressing with the salad, saving some and put a dollop on top of each serving before sprinkling the walnuts. Make it your own-you can’t go too wrong with this dressing.

My husband LOVED the dressing and couldn’t stop eating it! I added a little more olive oil and red wine vinegar b/c the initial dressing came out very thick. Still good though. Will definitely make again.
