Mixed Berry Salad

This salad combines high fiber fruits with a little yogurt. Other fruits that could be used are apples, pears, blackberries, cherries, peaches, plums and grapes.

Ingredients

  1. 2 tablespoons low-fat yogurt (try key-lime or lemon)
  2. Juice of 1/2 lime (about 1 tablespoon)
  3. 1 tablespoon fresh mint leaves, torn
  4. 1 cup cubed cantaloupe
  5. 4 medium strawberries, stemmed and quartered
  6. 1/4 cup raspberries
  7. 1/4 cup blueberries

Instructions

  1. Whisk the yogurt, lime juice, and mint together in a medium bowl. Add the fruit and toss to combine. Serve.

I made this for my mom and dad and i absolutly loved it! Some changes i did make were pomegranite yogurt and i also added some blackberry to it. it was very good an refreshing. I would highly recomend making this recipe.

This was a simple, easy fruit salad that was fantastic. The only change I would make would be using a different yogurt flavor, perhaps vanilla. I found the lime to be too tart with the fruit. Overall, very good though.

I used the Key Lime Pie yogurt and with the lime juice I found it a little too tart. I think I would have enjoyed it more with strawberry yogurt instead. Definately a healthy alternative though.
