Ingredients

  1. 1 cup miso paste (soy bean paste)
  2. 1 cup low sodium soy sauce
  3. 1/2 cup brown sugar
  4. 2 teaspoons sesame oil
  5. 2 teaspoons chopped garlic
  6. 6 salmon fillets

Instructions

  1. To make the glaze: In a large bowl combine the miso paste, soy sauce, sugar, sesame oil, and garlic.
  2. Preheat grill to medium.
  3. Brush salmon fillets with the glaze. Grill over medium direct heat and continue brushing with glaze throughout cooking process.

I prefer mixing miso paste with Mirin and a little brown sugar. Top cod or salmon with this mixture and broil for about 8 to 10 minutes. I serve it with a tangy side of sliced cumcumbers soaked in white wine and rice wine vinegar with red pepper flakes. That acid taste goes great with the fish topped miso.

We tried this recipe last night and I must say it was a bit disappointing. I prepared the glaze exactly as the recipe is written. The glaze itself turned out to be a little watery and very (too sweet. It didn’t compliment the taste of the fish rather it overwhelmed it. I’ve had other miso glazed fish before where the sauce was more “carmelized”…that’s what I was looking for with this recipe. So, I would not recommend this particular recipe. I think you can do better. Keep looking, there are lots of variations to this kind of recipe for fish.

im not sure if it was the miso paste i used but i found this recipe to be extremely salty. i would cut down on the amount of soy sauce and add more sugar. overall the taste was good.

My boyfriend and I both live in military barracks, so it’s hard for us to cook dinner with only a microwave and a plug-in skillet at our disposal. Despite my utter hatred of all things fish related, he insisted I grill up some salmon. I still hate salmon, but find it tolerable with this… what’s the word i’m looking for? ABSOLUTELY INCREDIBLE glaze. I didn’t add ginger and cut down on the sesame oil, but on the whole it was delicious. My boyfriend told me I have to make this a lot more, and for once, I don’t mind cooking fish. This is perfect and easy to manage in a barracks or a dorm room.

This was really good. I altered it a bit the second time I cooked it. I did a full fillet and put the fish in a big piece of foil on a bed of sliced onion and mushrooms then crinkled it up and put it in the oven. It was steamed this way and very tender.

Loved this recipe. I marinated the salmon for about 1/2 hour before cooking it. It makes a nice moist piece of salmon with a sweet glaze. Very quick and easy.
