Ingredients
- 2 cups sugar
- 6 cups water
- 2 cups fresh lemon juice
- 1/2 cup mint leaves
Instructions
- To make simple syrup: Place 2 cups sugar and 2 cups water in a saucepan and bring to a boil. Stir until sugar is dissolved and let cool. Place lemon juice in a large pitcher, add remaining 4 cups water and 1 cup of the simple syrup or more to taste. Stir in mint leaves and refrigerate for 1 hour. Serve over ice.

We picked the lemons from my grandparents lemon tree, and then we took them home to make lemonade. I recommend 1 1/2 cups of simple syrup. We were out of mint but the whole family loved it anyway. Next time we will take some mint from grandma’s garden.
Use all of the syrup and twice the water, and it matches what is needed to compensate for the lemons. I also used a couple of limes when I ran out of lemons, and it was delicious!

This has become a family favorite! I have lots of mint in my herb garden, so this is the perfect way to use it. I’m not sure why this recipe would have you make so much simple syrup if you were only supposed to use 1 cup….but If you use all the simple syrup you make, it’s really sweet? I just use all the syrup, but then add more water or ice until it’s how we like it.
Refreshing, tangy, not too sweet with a pleasant hint of mint. Perfect drink for summer.

I made this on Easter Sunday and it was incredible!!! Since we had a large family over for lunch, I did not add any mint. The entire family raved about the drink…even little ones with picky taste buds! However, I have made this recipe before WITH the mint, and I loved it! Very refreshing and will keep as a staple recipe for any gatherings/BBQs!
