Ingredients

  1. 10 cups assorted fresh fruit, such as cantaloupe, honeydew, papaya, pineapple, mango, strawberries, and seedless red grapes, cut into bite-size pieces
  2. 1 lime, juiced (about 1/4 cup)
  3. 2 tablespoons orange liqueur (recommended: Cointreau)
  4. 2 tablespoons finely chopped fresh mint leaves

Instructions

  1. Place cut fruit in a large bowl. Mix lime juice and liqueur together and pour over fruit. Sprinkle with mint and toss well. Serve immediately or refrigerate up to 1 day.

Had to prepare a fruit and dip dish for a large church picnic. Knew refrigeration space would be at a premium as all church members attending (300 were also expected to prepare side dishes for the event. I went online for a non-refrigerated fruit salad and this one came up. It sounded perfect. I made two 9×13″ pans – it was so easy to prepare and was absolutely delicious and refreshing on a hot summer afternoon. Have already had requests to share the recipe. And those organizing the food behind the scene were thankful the dish could sit out on a counter until it was served.

My group loved this, and it was easy to make.

I would also like to remind the masses, that the only access to the Internet for some people is a phone or tablet, which are hard to type on, and errors are often made that we don’t catch.
