Ingredients
- 1 medium cucumber
- 1 (12-ounce) bag broccoli coleslaw
- 2 tablespoons finely chopped mint leaves
- 3/4 cup yogurt
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
Instructions
- Grate cucumber into a large bowl. Add broccoli slaw and mint. Toss to combine and set aside.
- In a small bowl, whisk together yogurt, honey, and apple cider vinegar. Pour over slaw. Toss to mix thoroughly.

It was ok but wont make again. It was still really crunchy.
I have made this several times and it always gets excellent reviews! This is incredibly easy to make and extremely flavorful and refreshing. Great dish to bring to parties or bbq’s. I buy the broccoli slaw with cauliflower, carrots and red cabbage. I use Greek yogurt. I add 1 cup of chopped onions (sweet or red. I do not grate the cucumber, but chop it with the skin on instead. I have also added a heaping tablespoon of minced garlic on occasion. I took this dish to a friend’s house for a five person summer dinner party. After the hostess insisted that “we have too much food, no one will eat it”, I left the party with a completely empty bowl! Two of the guests were Greek and they had second and third helpings. You really ought to try this.

I love cole slaw, and found this to be a nice change from old fashioned cole slaw. I did swap out regular cole slaw instead of the broccoli slaw (it was on sale and I’m a miser). While I still like the old fashioned version better, I certainly will make this on occasion to change things up.
