Ingredients
- 4 ripe bananas
- 1/2 cup unsweetened cocoa powder
- 1/4 cup skim milk
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Mint extract, as needed
- 1/4 cup semisweet chocolate chips
Instructions
- Peel and cut the bananas into 1-inch rounds. Place the bananas in a freezer bag and freeze for at least 3 hours.
- In a small bowl, whisk together the cocoa powder, milk and vanilla.
- If your banana slices have been frozen for longer than a day, let them thaw for about 15 minutes. Place the frozen bananas, chocolate mixture and salt in a food processor and blend well, stopping to scrape down the sides often to get a smooth, even consistency. Add a drop of mint extract to the ice cream, blend and taste. For a more intense mint flavor, increase the mint a drop at a time until you achieve the desired taste. Finally, add the chocolate chips into the ice cream and stir by hand until they’re mixed throughout.
- Scoop the ice cream into single-serving bowls and serve immediately or cover in plastic wrap and freeze. If you’re saving these for a later time, remove the bowls from the freezer about 5 minutes before serving.

I didn’t put the mint in because I was afraid of ruining it. This is delicious, and I use it for my protein milkshakes. I add a scoop of plain or vanilla protein powder with a cup of non fat milk.
So delicious!! I love that it is a soft serve consistency. Beware of the mint though. You really only need like a drop because too much will ruin it.
Hello! My name is Laura and I’m here to confess that this recipe, often times called Nice Cream is absolutely divine!! I just bought a Cuisinart food processor and couldn’t believe how well it transformed the frozen bananas into a smooth and creamy consistency! If you don’t have a food processor, a high speed blender would work as well. The mint extract (go lightly on this) and a pinch of kosher salt brought it all together for the perfect healthy treat. I also used raw cocoa powder because that is what I had on hand. My husband is gonna be soooo surprised when I tell him about the secret ingredient
I made this with almond milk and peanut butter. It turned out so good and I will definitely be making this again!
Super easy to make, followed the initial recipe…oh so yummy. Will be making it with PB2 Fit….and maybe add some peanut butter chocolate chips. OH YEAH!
Very good ,instead of mint I add peanut butter about 2 tbls it came out so good!
It was just OK. I don’t like mint so I omitted it. Maybe that’s why both my husband and I thought it tasted more like banana-chocolate ice cream. Texture was ok…. not great, but ok for not being churned.

This is surprisingly good! The consistency is like a soft-serve! I tried it BEFORE putting the mint extract in and I actually liked it better with just the chocolate flavorings. But, this was due to me going overboard on the mint.
TIP: Be very careful adding the mint… my bottle did not just let out 1 drop…I probably added 3-4 drops and I really overdid it with the mint which was overwhelming. That was my fault, not the fault of the recipe. 1 drop ONLY should do it. Get an eyedropper if your bottle of mint doesn’t have a control mechanism on it. Do not try to think you can just plop in a small amount and it will be okay. This isn’t like adding an extra clove of garlic to recipe where it just enhances the recipe.. this will basically ruin it if you add extra mint.
I will be experimenting with this recipe more.. my next will be to follow the same recipe but leave the mint out and add PB2 powder (peanut butter powder) to get a chocolate-peanut butter ice cream. So healthy with the no added sugars. I’m not the biggest banana fan so wasn’t too keen on this recipe to begin with, thinking I would not like it. Keep in mind you WILL know its made out of bananas, this isn’t real ice cream obviously. But it’s great for those of us trying to avoid the added sugars, dairy, etc…
