Mini Meatloaves

Simple basic weeknight dinner. There’s a mixture of pork and turkey to keep it meaty and flavorful. But you can use all ground turkey if you like. The football shape is perfect for a game night.

Yield: 4 servings

Ingredients

  1. 8 ounces lean ground pork
  2. 8 ounces lean ground turkey
  3. 1/3 cup old-fashioned oats
  4. 4 tablespoons ketchup
  5. 1 tablespoon spicy brown mustard
  6. 1 teaspoon soy sauce or Worcestershire sauce
  7. 1/2 teaspoon finely chopped fresh oregano, plus more for garnish, optional
  8. 2 large egg whites
  9. 1 medium red onion, grated (about 1/3 cup)
  10. Kosher salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper or aluminum foil.
  2. Gently combine the pork and turkey by hand in a large bowl. Stir together the oats, 2 tablespoons of the ketchup, 1/2 tablespoon of the mustard, the soy sauce, oregano, egg whites, onions, 1/2 teaspoon salt and 1 teaspoon pepper in a small bowl until combined. Add the oat mixture to the meat mixture and combine by hand until just incorporated.
  3. Form the meatloaf mixture into 4 small football-shaped loaves, about 4 inches long and 1 1/2 inches thick, and place on the prepared pan. Stir together the remaining 2 tablespoons ketchup and 1/2 tablespoon mustard in a small bowl. Brush some of the ketchup mixture on each meatloaf.
  4. Bake until fully cooked, about 20 minutes. Garnish with additional fresh oregano if desired, and serve.

Way too much sauce for amount of meat so meatloaves didn’t hold shape although definitely delicious. Next time I will make less sauce.

These were great. I love individual servings for my family. As other reviewers, I made a few adjustments, but not much. I only made a more traditional meatloaf topping with ketchup, worstershire and brown sugar. The oats didn’t stand out, so fine for a bread crumb substitute. Will make again!

I doubled the recipe so I could use the full 1-lb package of ground turkey and pork, so I made a 9″ x 13″ loaf pan into 8 pieces. I subbed A-1 for the mustard, too. Came out delicious! The red onion gave it such a lovely flavor and the oats were a fantastic replacement for my usual breadcrumbs.

Enjoyed these!!  Plenty of flavor!  I doubled for leftovers, added a T of brown sugar to the glaze.  May add a pinch of cayenne to the meat mixture next time.  Yum!

Great and easy to make recipe!

A great meatloaf recipe! Very flavorful and simple to make. I’ll add a bit of red meat to the mixture next time, but that’s just a personal preference.

12 tsp. of oregano?  Wondering why didn’t they just say 1/4 cup.  Who wants to fiddle around with a teaspoon 12 times to measure this ingredient?

I’ve made this with turkey and pork, turkey and Italian sausage, elk burger, you name it. It is by far my friend’s and family’s favorite meal I make. Such a solid recipe.

This is a delicious recipe and easy to make. I have been doing some healthy eating. This recipe was very satisfying. I used Italian bread crumbs instead of oatmeal and grey poupon for the mustard .
