Nothing compares to the flavor of fresh key lime pie. This recipe is quite easy to make and tastes great. The benefit of mini pies is that each person can have one.

Ingredients

  1. 12 mini graham cracker crusts
  2. 3 cups sweetened condensed milk
  3. 1 cup sour cream
  4. 1 cup freshly squeezed Key lime juice
  5. 3 tablespoons grated Key lime zest
  6. 2 fresh Key limes, thinly sliced
  7. 1 (7 ounce) can whipped cream topping

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Place mini graham cracker crusts onto a baking sheet.
  2. In a bowl, whisk together the sweetened condensed milk, sour cream, Key lime juice, and Key lime zest until smooth. Pour the filling into the graham cracker crusts, filling to the top.
  3. Bake in the preheated oven until hot, 5 to 8 minutes. Refrigerate until thoroughly chilled, at least 1 hour. To serve, garnish each mini pie with a Key lime slice and a dollop of whipped cream topping.

Way to much condensed milk…. almost 3 cans of condensed milk is way too much…threw away a lot of the batter…..14 oz can of condensed milk is actually measured by weight not volume it’s actually 1 1/4 cup volume or 10 oz volume. Made it better the second time using 2 cups 16oz volume which is about 1 and 3/4 cans.

Good but not traditional key lime pie so if you are looking for a traditional key lime pie recipe, this is not it.

The key lime pies came out great! But the measurements on the website got all messed up. It went from saying 3 cups of sweetened condensed milk for 12 serving size to 3/4 of a cup when you DOUBLED the recipe… then when I went back to a regular serving (serves 12) it changed to 1/3 and 2 tps of sweetened condensed milk. When I would refresh the page it went back to 3 cups of it again… over all that was very confusing and I ended up doubling the recipe to make 24 mini pies and used 4, 14oz cans of sweetened condensed milk which tasted great! The only other thing was it didn’t make 24 mini pies…. the “doubling the recipe” to make 24 mini pies ended up really making 24 mini pies, and TWO ENTIRE pies. Long story short, the measurements are way off. It makes way too much… but it tastes great! Also I couldn’t find any pre made graham cracker shells so I made my own graham cracker crust and it came out great. 1 cup graham cracker crumbs, 6 TBSP butter, & 1/3 cup of sugar. I did use paper cupcake liners and it worked perfect… I saw in another comment to use foil ones if you make your own crust cause the butter soaked the paper but I didn’t experience that at all. I was actually happy that I made my own crust and used the paper cupcake liners because it came out amazing. Definitely will use this recipe again but will be careful with the measurements so I don’t make enough to feed an army and all the neighbors lol. Super delicious though! Definitely recommend making

I would put 3/4 cup sour cream vs 1 cup, but other then that, A++++ Very easy to make!

I made the recipe as directed, other than substituting Key Limes for Rangpur Limes (a mandarin/lemon fruit). I used the Keebler mini-crusts from the grocery store and they turned out FANTASTIC! Even partygoers that do not typically eat dessert had one and ate every bite. My only wish is that I had a larger tree, since this took up almost all of my ripe fruit. Couldn’t recommend this recipe more!
