Mini Corn Dogs with Sweet and Spicy Pepper Relish

Ingredients

  1. 3/4 cup ketchup
  2. 1/4 cup pickled hot peppers, diced
  3. 1/4 cup pickled sweet peppers, diced
  4. 1 egg
  5. 1 (8.5-ounce) package corn muffin mix
  6. 2 teaspoons garlic powder
  7. 2 teaspoon onion powder
  8. 3/4 cup milk
  9. 1/2 cup all-purpose flour
  10. 1 package cocktail franks
  11. Vegetable oil, for frying
  12. 20 (6-inch) wooden skewers

Instructions

  1. In a small bowl combine ketchup and pickled peppers. Mix well and set aside.
  2. In a large mixing bowl, combine egg, corn muffin mix, garlic powder, onion powder and milk. In a separate shallow dish add flour. Insert wooden skewers half way into cocktail franks.
  3. Heat oil to 375 degrees F in a deep-fryer. Dredge each cocktail frank in flour, dust off excess then dip into cornmeal batter. Fry 2 to 3 corn dogs at a time for about 1 to 2 minutes or until golden brown. Drain on paper towels. Serve warm with the relish.

This was quick and easy and very tasty. The corn dogs came out perfectly. Make sure the oil or grease is HOT before placing the battered hot dog into the skillet or deep fryer. This will alleviate the batter coming off.

I just made these mini corn dogs. I thought it was very good. Eating a corn dog just brings back memories of your childhood. I could not find the cocktail franks so I just cut up turkey dogs into thirds and it was just as fun to eat. I am going to freeze the left overs and then bake them and see how they taste after they have been cooked. I will try them on Super Bowl day and let you know how they turned out.

For those of you who have commented that they were not easy to make, I have no idea what you are doing. Believe me when I tell you that I made these mini corn dogs in just 15 minutes. I did’nt flour the weiners and the batter stuck. I actually used a little more milk than the recipe called for as the corn bread mix was 8.5 ounces. You need to the batter to be somewhat thick and cook it for about 3 minutes. The kids loved them. I hate corn dogs but loved these.

I only used a little salt and pepper to season the batter. Enjoy!

Dogs stuck to batter better withour flour. Use 2/3 cup milk not 3/4 or too runny. Also cut down down on the spices to 1/2 tbsp each. Fry 2-3 minutes, done. Relish: I made it with 1 tbsp. Dijon, 3 tbsp. Catcup, 1 tsp. mustard purred lightly with about 12 bread and butter pickles.
