Mini Corn Dog Muffins with Creole Mustard Sauce

Ingredients

  1. Nonstick cooking spray
  2. 1/2 cup buttermilk
  3. 4 tablespoons unsalted butter, melted and cooled
  4. 1/4 cup sugar
  5. 1 large egg
  6. 1/2 cup yellow cornmeal
  7. 1/2 cup all-purpose flour
  8. 1/4 teaspoon baking soda
  9. 1/2 teaspoon kosher salt
  10. 4 all-beef hot dogs, cut into 1-inch pieces
  11. 1/2 cup Creole or grainy mustard
  12. 1/4 cup mayonnaise
  13. 1 teaspoon honey
  14. 1 teaspoon hot sauce
  15. 1/2 teaspoon white wine vinegar

Instructions

  1. Preheat the oven to 375 degrees F and spray the mini muffin pan with nonstick spray.
  2. For the muffins: Whisk together the buttermilk, melted butter, sugar and egg in a medium bowl. In another medium bowl, whisk together the cornmeal, flour, baking soda and salt. Add the wet ingredients to the dry ingredients and stir to combine. Don’t overmix.
  3. Fill each mini muffin cup halfway with the batter. Gently push a piece of hot dog into the batter in each cup, being careful not to push it all the way to the bottom. Bake until the edges just start to brown and the muffins are cooked through, about 10 minutes.
  4. For the Creole mustard sauce: Meanwhile, whisk together the mustard, mayonnaise, honey, hot sauce and vinegar in a small bowl.
  5. Serve the mini corn dog muffins warm with the mustard sauce.

Looks great for a picnic. Only complaint is that the how to video for the Creole Mustard Sauce doesn’t match the recipe. The recipe doesn’t list the ketchup that is included in the video.

watched Kardea make them and her dogs were nor 1 inch and only makes 16 muffins not 24 getting tired of the shows and the online recipes not matching up happens way too frequent on food network

Super easy to throw together. I decided to add a little chopped pickled jalapeño to the batter. I might add a sprinkle of cheese next time I make these. My only issue was that the cornbread topping didn’t bake over the top of the hot dogs. Not sure what went wrong but they still tasted delicious. Will definitely make them again!!
