- 1 cup lukewarm water
- 3 cups all-purpose flour
- 2 tablespoons shortening
- ¼ teaspoon salt
- 1 tablespoon vegetable oil
- ½ cup chopped onion
- 1 (6 ounce) can tomato paste
- ¾ cup water
- 1 teaspoon salt
- ½ teaspoon white sugar
- ½ teaspoon dried oregano
- ¼ teaspoon garlic powder
- ¼ teaspoon dried basil
- ¼ teaspoon dried marjoram
- ¼ teaspoon ground cumin
- ¼ teaspoon chili powder
- ⅛ teaspoon crushed red pepper flakes
- ⅛ teaspoon ground black pepper
- 1 (12 ounce) package shredded mozzarella cheese, or to taste

- Make the dough: Dissolve yeast in lukewarm water in a small bowl. Let stand until creamy, about 10 minutes.
- Combine flour, shortening, and salt in a large bowl; add yeast mixture and stir until dough comes together. Knead dough on a lightly floured surface until smooth and elastic, about 8 minutes.

- Lightly oil a large bowl. Place dough into the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 45 minutes.

- Meanwhile, make the sauce: Heat oil in a small saucepan over medium heat. Add onion and sauté until tender, about 5 minutes.

- Stir in tomato paste, water, salt, sugar, oregano, garlic powder, basil, marjoram, cumin, chili powder, red pepper flakes, and black pepper; simmer for 15 to 20 minutes.

- Preheat the oven to 400 degrees F (200 degrees C).
- Divide dough in half. Roll each half into a 12-inch circle. Place dough onto two 12-inch pizza pans; cover with sauce and mozzarella cheese.

I made this two Pizza this afternoon for dinner. I made one with Colby Monterey Jack cheese and bell red peppers red onion, mushrooms & cheese. The pizza sauce is so unique and tasty. The pizza is so yummy. My young adult kids said, mommy, the pizza is good . I highly recommend this recipe.
One of the best pizzas I have ever had. I didn’t split the crust which I think made the crust to pizza ratio better. I paired it with fresh mozzarella on top and it turned out absolutely amazing and delicious!
I made the dough several times and the first time it was not great. The second time I used Olive oil in place of the shortening and I kneaded it the full 10 minutes. I watched an authentic Italian pizza maker say 15-20 minutes! I also let it rise in the fridge for 10 hours. From what I have read, it could even go as long as 24 hours to develop the flavor. This makes one very large thick crust pizza or two medium thin crust pizzas. The sauce is very good and becomes great after sitting for a day or longer. I have not been able to bring myself to try it with the cumin and chili powder, but maybe the next time!
I made pizza today using the sauce recipe and I like it! It has a distinct taste and aroma that was lacking in my pizzas. Reminds me of Mexico.
You might not expect this, but I am ten years old (I made it). My whole family loved it! They said the sauce was heavenly and especially likes the bread. I didn’t have marjoram, and used butter instead of shortening. The only reason I gave this a 4 out of 5 is because you should cook it for 5 minute less. The sauce was burnt, but overall this recipe was amazing and easy.
The crust lacked flavor but did hold up well with all the toppings. Spread the entire crust over a cookie sheet. The sauce is fantastic. Topped with pepperoni, mushrooms and black olives. Pretty good pie.

Absolutely the best pizza and sauce
I really like the dough, very easy to make. The ingredients composition is really balanced which makes it easy to knead. I didn’t have shortening so I replaced it with 2 tbs of butter which add flavor to the dough and it tastes better as thick crust pizza.
I made the sauce recipe with a just a couple of changes. Fresh basil and no chili powder as I was making for my grandkids. Kids loved it, daughter loved it, and picky husband loved it! This is the keeper!
Worth the time! Delicious, A very authentic tast. Will make it again. I Recomend preping dough one day before. I added italian herbs and garlic powder on the dough made a big diffrence in flavor. Keep in mind this recepe will feed about a family of 5, will make about 5 small individual pizzas, Or two large pizzas (thick), if you make it thin you will have extra left over. I made double the serving we had a lot extra dough for tomorrow:) leave a bit longer for crispier crust.

I made garlic butter on the dough before putting the toppings on it so the crust had some yummy flavoring
Rating only for the sauce as I use another recipe for crust – FANTASTIC. 1 6 oz. can of tomato paste = 3/4 c. I use half the amount of cumin and paprika to suit personal taste. and sub thyme for marjoram as I can’t get it here. WONDERFUL! Also, I must use far less sauce on my pizza than other people, because this is enough sauce for about 6 pizzas for us!
I absolutely LOVE the sauce from this recipe. I’ve made the sauce at least 10 times though, and it is to DIE for. Reason for 4 stars – The dough/crust is mediocre, I’m trying the “pizza dough II” recipe from this site this time. This dough turns out bread-like and flavorless. I’ve made it 3 times with different unsuccessful tweaks.
Love this recipe! I did add some sugar to the dough which I liked, but everyone is different. I’ve tried it as two crusts and as one, and I love it as one fluffy crust.

I Made the recipe exactly as is. I thought the recipe was just okay, the dough tasted something like a tombstone pizza and the sauce had me and my family thinking of an enchilada/mexican pizza flavor. First and last time i’ll be making this recipe.
