Mike’s Chipotle Salsa

Set it and forget it with this simple, perfectly slow-cooked teriyaki pulled pork recipe. The mild teriyaki taste makes it possible for the pork to continue to be the center of attention.

Ingredients

  1. 6 large tomatoes, roughly chopped
  2. 1 (7 ounce) can chipotle chiles in adobo sauce, or more to taste
  3. ½ bunch fresh cilantro, roughly chopped
  4. 1 medium onion, roughly chopped
  5. 2 medium jalapeno peppers, roughly chopped, or more to taste
  6. 1 medium lime, juiced
  7. 3 cloves garlic
  8. 1 tablespoon kosher salt, or to taste

Instructions

  1. Combine tomatoes, chiles in adobo sauce, cilantro, onion, jalapenos, lime juice, garlic, and salt in a blender. Blend on low speed until all ingredients are coarsely chopped.
  2. Place in the refrigerator and chill for at least 2 hours prior to serving.

I LOVED this salsa! I have never made salsa with chipotle peppers and I really loved the smoky flavor. This was also super easy to make in a blender. I’ll definitely be making this again! Next time I will use less onion as I’m sensitive to it, so although it was delicious, the onion flavor lingered with me for days! The jalapenos also gave it just the right amount of heat.

I really like the smoky flavor that the chipotle peppers add, but beware, they also add heat! I did not use the whole can, and I’m glad about that. Using fresh tomatoes really gives a flavor boost, but I suggest chopping them and letting them drain, while the other ingredients are being prepared. I added all ingredients EXCEPT tomatoes to the food processor and placed those in a serving bowl. I processed the drained tomatoes separately, then stirred all the ingredients, together. This also gave a chunky salsa, which we prefer. Thanks for the idea!

This is a very flavorful salsa and so different than my usual recipe I make. The flavors are very bold! My jalapeños were on the hot side so it was pretty spicy but still the other flavors held up.

Quick and easy homemade salsa recipe full of flavor and heat. The chipotle in adobo sauce gives it a nice smokey edge and a deep, dark color. I used a food processor instead of a blender. Love that you can chop this up as chunky or fine as you like. This one is a winner!

Fabulous Recipe! Surprisingly bold and tasty, plenty spicy but not overly so, this salsa was – in my husband’s words – “probably the best ever!” Changes I made were: *remove the pulp/seeds from half the tomatoes *used the food processor vs blender *diced and saved a little of the cilantro, onion and tomato for crunch and garnish on top
